I am presenting yet another Upwas recipe for you made out of sweet potato. I have already posted Shakarkandi kheer and spicy shakarkandi. This vada I have made with little variation. Once I had been to Parle with my friend for some work on that day my friend was fasting. Hence we went to a restaurant where they sell specially the varieties on fast day.
We happened to eat farali potato stuffed with sabudana. Instead of Potato, I used sweet potato and it was a wonder ful dish which my daughter and her friend really enjoyed.
Now the recipe for you to enjoy during the Navrathri festival.

- 2 medium size sweet potatoes
- 3 tbsp bhajani flour + 2 tbsp for making cups of sweet potato(or you can use sabdudana powder for binding, slightly roast the sabudana and powder it in the mixer)
- salt as required
for the stuffing
- 1/4 cup sabudana, sago pearls
- 1/2 tsp green chilli paste (adjust according to your requirement)
- 1/2 tsp ginger paste
- 1 tsp chilli powder
- 1 tsp lime juice
- 2 tbsp chopped coriander leaves
- 2 tbsp crushed peanuts
- 1/4 tsp jeera, cumin seeds
- 2 tbsp oil
- salt as per requirement.
- Oil for frying.
Method:
- Pressure cook the sweet potato for 2-3 whistles.
- when it cools down, peel and smash well
- add the bhajni or sabudana flour and make a dough of it
- divide into equal portions and make a cup of it with the help of extra bhaji flour as mentioned
Making the stuffing:
- heat 2 tsp oil in kadai.
- add cumin seeds
- when it crackles add the ginger and chilli paste
- saute for a second and add the sabudana, salt and sugar (optional) and mix well
- add the crushed peanut, mix, cover and switch off the gas.
- add the lime juice and mix well.
- allow to cook the same for 10 minutes.
- remove from the kadai and put in a plate to cool.
- add the chopped coriander leaves and mix well.
- your stuffing is ready now to fill in the sweet potato cups
- Now make the cups with the help of bhajni flour and fill the sabudana mix in it and cover well.
- ensure that there is no gap and should not break it
- Heal oil in kadai, deep fry the vadas two to three at a time and transfer to a paper towel for removing excess oil in it.
- serve with green chutney.
