You can make varieties of sundals. Another variety is with whole black urad. It is very nutritious and is recommended for diabetics. Black urad is very popular in the Punjabi cuisine of India and Pakistan
where it is known as "sabit maash" an ingredient of dal makhani. In
Tamil it is known as "ulunthu" in Telugu as "minumulu", in Kannada as
"Uddina Bele", and in Oriya as "Biri Dali" and in Malayalam "uzhunnu".

Variation: You can also fry coriander seeds, red chilli, chana dal or tur dal and coarsely ground and put this masala in it along with scraped coconut.

Let us have a look at the recipe now:
Ingredients:
- 1/2 cup black whole urad
- 2 tbs grated coconut
- 2 tbsp coconut oil
- a small piece of ginger
- one green chilli
- few curry leavaes
- 1 tsp mustard seeds
- 1 tsp urad dal
- 2-3 broken red chilli pcs
- 1/4 tsp turmeric powder
- salt as required
- Wash and soak the urad for 8 hrs minimum.
- cook them in pressure cooker for one whistle with salt and turmeric powder or directly cook them. (i opted this method)
- remove the excess water if any.
- heat oil in a kadai, add mustard seeds, urad dal, broken chilli and curry leaves
- pour the urad dal in the kadai and mix well.
- coarsely grind the coconut, ginger and green chilli.
- add this into the urad and mix well.
- serve hot.
Variation: You can also fry coriander seeds, red chilli, chana dal or tur dal and coarsely ground and put this masala in it along with scraped coconut.
