UKKARAI, OKKARAI SWEET CHANA DAL PUTTU, PUTTU

Ukkarai is another form of sweet puttu but made with chana dal and jaggery.  This dish is also prepared for neivedyam during Navrathri, Diwali etc.  You will agree with me if you want to eat something, any time you can make it.  Here we go with the recipe of this.

Ingredients:

  • 1/4 cup chana dal
  • 1/4 cup jaggery
  • cardamom powder
  • cashewnuts broken
  • 2 tbsp ghee

Method:


METHOD:
  • Roast the channa dal in a pan till nice aroma comes out but ensure that you do not burn the same.  approx. two to three minutes is ok 
  • Wash and soak it in water for 3 -4 hours.
  • Drain the water and grind to a smooth paste . 
  • If need be just add 1 tblsp of water.   
  • Grease a small bowl  or a plate with ghee.  Put the ground chana dal in it and steam cook for 10 minutes. 
  • In a kadai put the jaggery and add  little  water. 
  • when it is completely melted, remove the  impurities if any, wash the kadai and transfer back the syrup to the kadai. 
  • Make one string consistency syrup.
  • We  can check  the consistency of the syrup  by taking the jaggery syrup between the thumb and the index finger. Before doing this just dip your fingers in water.
  • When it reaches one string consistency, add the ground dal to this and mix it nicely.
  • Add a tblsp of ghee to this and mix well,till it becomes soft and reaches a puttu  consistency.
  • You can add little more ghee if you wish while sauteing the same.
  • Prepare this dish in low flame always. 
  • Fry the  cashewnuts in ghee and garnish the okkarai /ukkarai.

Variation:  It is a lovely dish.  If you add little more jaggery, you can make pooran poli out of this.
