SHAKARKANDI BARFI, SWEET POTATO BARFI, RATALU BARFI, MADHURAKIZHANGU BARFI

Sweet potatoes are available plenty now since the Festival Navarathri started and all are busy buying this because they are fasting.  This is used for upwas recipe and I made  barfi with  sweet potato, sugar, desiccated coconut.  Here is the recipe for you.

Ingredients:

1 cup sweet potato (1 medium size potato I used)
1/2 cup sugar
1/4 cup desiccated coconut
 2 tbsp crushed peanut + 1 tbsp for topping
2 tbsp ghee
1/4 tsp dalchini powder
a generous pinch of jaifal powder

Method:

1.  Peel and grate the sweet potato.
2.  Heat ghee in the kadai
3.  add the grated potato in it and saute for 5 minutes
4.  add the sugar and cook the same till it is dried up.
5.  add the desiccated coconut 2 tbsp of crushed peanut and mix well
6.  Now add the dalchini, jaifal powder and transfer the same to a greased plate.
7.  Level it equally, top it with the 1 tbsp peanut and allow to cool.
8.  Keep it in the fridge for one hour and later on cut into pieces and serve.
