POTLI PUFF AND MINI PUFF

Potli puff is made with Wheat flour and vegetables and baked it.  You can also deep fry them but immediately you have to serve as it tend to become soggy.  If it is made in maida, it will be crispy like samosas but I do not want to use maida  and fried item, hence  I baked.  The end product was really nice.





Let us have a look at the recipe now:





For making the dough

1.  21/2 cup wheat flour
2.  2 1/4 tsp active dry yeast
3   3/4 tsp salt
4.   1 cup warm water
5.  1 tbsp olive oil
6.   1 tbsp sugar


FILLING:

1/4 cup each chopped cabbage, capsicum, boiled and crushed green peas, grated carrots and beans
2 onions finely chopped
2 tbsp oil.
1 tsp garam masala
1/2 tsp chilli powder
1/4 tsp turmeric powder

Note:  Masalas according to your requirement, you add.


Par boil the beans and keep aside.
Heat oil in kadai, add the onions and saute for a minute.
add the capsicum, boiled green peas, beans and saute for another two minutes
add the cabbage, salt, garam masala, chilli powder, turmeric powder and saute for a minute.
and transfer to a plate immediately.

your filling is ready.


Method:

1.  Combine yeast, warm water, 1 tsp sugar mix well and keep aside. after sometime it will rise.
2,.  Combine 2 cups flour, salt and remaining sugar.  Make a well in center add yeast and oil
3.   add remaining flour
4.  make a dough of it by adding little water, cover and keep aside for rising.  It will take about an  hours  time.
5.   when it rises, punch down the dough to release the air.  
6    Divide into equal parts and make puri out of it. 
7.   Fill with vegetables and make potli out of it
8.    Preheat oven at 180 degree and bake the same for 25-30 minutes.  If you feel that the dough is not cooked keep for another 5-10 minutes.  before keeping it in the oven brush with some oil.
9.   serve hot with sauce or chutney or as it is.
