1/4 cup jaggery
2 tbsp grated coconut or coconut bits
few pieces of cashewnuts
cardamom powder
1/4 tsp turmeric powder
a generous pinch of salt
2 tbsp ghee
Method:
- Dry roast the rice powder till turns brown colour, keep aside
- Boil a cup of water, add the turmeric, salt and keep aside, allow to cool.
- when the turmeric water cools down, sprinkle little water in the roasted rice powder and mix well.
- The rice powder should be moisturised with water till such time you get a binding powder at the same time when you break it, should be in the powder form.
- should not add too much water, take care of this.
- Now place this powder in a muslin cloth and steam cook for 10 minutes.
- after 10 minutes, take out the same, transfer it in a plate and mash well to ensure that there are no lumps in it.
- Now in a kadai, add little water and melt the jaggery.
- Add the grated coconut and one tsp ghee.
- Boil the jaggery till you get 2-3 thread consistency. To check the correct form - drop little syrup in water and form a ball, if immediately it forms a ball, the consistency is right.
- At this stage, remove from the gas and add the steamed rice powder in it and stir well till you get a powdered form of puttu.
- Your neivedyam is ready.
- heat the remaining ghee and fry the cashews and coconut bits and add to the prasadam. ( if you are adding grated coconut, you need not add the bits of coconut, but if you wish both way you can choose).

I have never tasted the sweet puttu this way. I have only eaten white puttu with sugar. Will try this out.
ReplyDeleteWhen you add the puttu to jaggery syrup, will it not become lumpy?? Just a doubt.
