PINEAPPLE PASTRY l Cakes/bakes

This pineapple pastry is very easy to make at the same time it is eggless too.  so if you wish to have a piece of pastry, you can really enjoy this one.  This is the favourite of my son and nephew and they really enjoy whenever i bring pineapple cake for their birthday.  As usual, the main ingredients are maida, sugar, milk and cool whip.

For making this cake, you do not have to pre-heat the oven, simply, microwave it, the base or spunch is ready.
PINEAPPLE PASTRY

let us have a look at the recipe now:

Ingredients:

2 tbsp butter
2 tbsp paneer ( i used home made paneer - low fat milk)
1 tbsp curd
1/2 cup sugar
3/4 cup milk
1 cup maida
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp pineapple essence
2 -3 slices of tinned pineapple
syrup from the tinned pineapple
whip cream

Method:

In a bowl add the butter, curd  and paneer. beat well.  add sugar and whisk well until it becomes creamy.               Now add the warm  milk and mix well.  Add pineapple essence and mix it.  sieve maida along with baking powder/baking soda.  Mix with the butter, panner, milk mix.  grease a microwave bowl and pour the entire mxture into it and microwave for 4-5 minutes.  Allow to cool.  when it cools down, transfer into a cooling rack.  Cut the same into equal sheets.

Now preparing the pastry with whip cream:

Take one sheet on a cake base.  pour little syrup from the tin.  Beat the cream and keep ready.  apply a layer on the pastry sheet.  cut the pineapple pieces and arrange some on the layer of cream.  Keep the other sheet and pour little syrup on it and apply the cream.  completely cover from all the sides with the whip cream and decorate with pineapple pieces and cherries or as you wish and serve.  enjoy any occasion with the lovely pastry.
