MIX VEGETABLE DRY SUBZI

Mix vegetable dry subzi I made for serving along with hot roti yesterday.  Since we are mixing almost all the vegetables, you are filled with protein, carbohydrates, vitamins, minerals etc.  It is a very simple, easy subzi to make and goes well as a side dish for rice and curry and with roti.  I filled the same in vermicelli dosa which I made today for breakafast.





Let us look at the recipe now:

Ingredients:

1/2 raw banana
1/2 capsicum
1 small piece yam
5-6 beans
1 medium size carrot
2 tbsp fresh tuvar
2 tbsp fresh green peas
1 tbsp fresh corn
3 tbsp thinly chopped cabbage
1 medium size tomato
1 medium size onion
or any other vegetables you like
1 tsp chilli powder
2 tsp coriander powder
a pinch of asafoetida
1 tsp ginger, garlic, green chilli paste.
1 tsp oil\
1 tsp ghee
1 tsp mustard seeds
1/4 tsp cumin seeds

salt
chopped coriander leaves for garnishing

Method:

wash and cut the vegetables into thin long strips.  cut  and put the yam, raw banana in water.  Heat oil and ghee in a kadai.  when it is hot, add the mustard seeds and cumin seeds, asafoetida when it splutters, onion, yam, raw banana and saute for 5 minutes.  now add rest of the vegetables except cabbagge and tomato and saute for another 5 minutes.  now add the tomato, masalas and mix well.  cover with a plate which can hold water in it.  cook the same till it is tender.  remove the lid and add the cabbage, mix well.  remove water from the plate and cover the subzi.  switch off gas.  let it remain for 5 minutes  by the time, the cabbage will also get cooked.  garnish with coriander leaves and serve hot with roti, chapati, or as a side dish for rice and curry.

Variation:  you can add garam masala also if you prefer.
