DAL ROTI UPMA IN CABBAGE LEAF (left over recipe)

We all make normally make paratha if dal is left over.  when dal and roti is left over what to do?  do not worry, here is a lovely recipe with this dal and roti.  I made upma out of it and was really tasty.  Actually you will be able to enjoy the same if it is little punchant.

Now let us look at the recipe now.:

4 phulkas
1/2 bowl dal (not plain dal, spicy dal with sambar powder, garam masala etc)
2 tbsp chopped cabbage lengthwise + 1 tbsp
1 tbsp grated carrot
1 tbsp grated beetroot
one spring onion with leaf
3 - 4 slices of tomato
chopped coriander leaves
check salt and add
2 tbs oil
1 cabbage leaf

OPTIONAL

1 tbs grated cheese (optional)
1/2 tsp sambar powder or chilli powder
1/4 tsp pepper powder
1 tbsp grated cheese

Method:

Since I prepared the dal with sambar powder and tempered  with mustard seeds and cumin seeds in ghee, there is no need to add extra spice unless you want them to be really spicy.  You can use the optional items.

Heat the oil in Kadai.  add the dal and boil it till it reduces and the water is evaporated from it.  break the rotis and put in mixer and grind them to a fine powder or coarse powder as you wish.  add the roti powder in dal and mix well.  add the greens of spring onion and half of the onions.  rest of the half keep for garnishing.  add 2 tbsp cabbage, 1 tbsp of beet root and carrots mix well.  Heat a non stick tava and place the cabbage leave on it.  allow to sizzle the same and transfer the upma in it.  (optional, you can just transfe the same into the cabbage leaf).   garnish with 1 tbs cabbage, spring onions, cheese  and coriander leaves.  serve hot with sauce or green chutney.

Optional items can be added according to your taste buds.  You can also garnish with fresh grated coconut. another variation of roti upma
