CORN SALAD

Salads are part of Indian menu in various forms viz, kuchumber, raita or plainly cut and decorated vegetables viz. cucumber, beetroot, tomato, radish etc. or with sprouts.  It is  very healthy for everyone.  During the season, we eat the bhuttas roasted in the coal and then applied some lime juice, salt and chilly powder in it.

We make salad with cucumber, carrot, onion, bell peppers etc.

MANGO KATLI, MANGO PAK

Mango is a delicious fruit and we had the same in our backyard abundantly.  During mango season, all the dishes at home will be mango based.

My children loves to eat mango.  They also like mango milk shake.  During the season, I used to make mango pulp and keep it in fridge.  Whenever they feel like drinking mango milk shake, they used to mix the pulp and milk and enjoy.

I tried the combination of mango pulp, milk and dry fruits to make this sweet dish and came out well and enjoyed by everyone.   This mango katli is a delicious sweet dish one can enjoy it during the season.




ALOO JEERA OR JEERA ALOO

Aloo jeera or jeera aloo  is a dry subzi prepared with potato.  This is a simple dish for the potato lovers seasoned with cumin seeds and mustard seeds and can be served as a  side dish.

 Dry aloo subzi goes well with chapati, puri etc.  I love this directly from the pan to the plate with a dash of lime and lots of coriander in it.  I like  coriander and if i get a chance to use it, I use it liberally.  

The flavour of cumin and dhania powder makes it more tasty than the normal aloo subzi.Aloo subzi is the favourite dish of everyone and can be enjoyed with roti, phulka and poori.  This can be served as side dish too.


MANGO KADHI

Mango kadhi is made with the ripe mango and curd.  It  is a very easy, simple and instant preparation if you have mango pulp in your freezer.  If not also, it is not a big issue to make it as one mango is sufficient enough to make kadhi for two servings.

You need ripe mango for this and goes well with the rice.  If the consistency is bit saucy, then you can serve it with chapati and phulka too.


MOONG SPROUT STIR FRY (DRY SUBZI)

Sprouts contains proteins, vitamins viz. A, B,C & K and easy to digest.  Once in a week, we must include this in our diet.  We can make sprouts salad, stir fry or make gravy based curry too to serve along with roti, phulka and Pav.

There are various health factors in the sprouts.  The sprouts can be just put in boiling water, kept for a second and remove it.  this can be had with dash of lime and sprinkled salt on top of it as a breakfast.

This is an easy to make dry subzi.  Can be eaten as a snack with  little lime juice  and chat masala in it or as a side dish for rice, chapati etc.

TENDER COCONUT KULFI

The kulfis are very delicious and can be had at any time.  We love the kulfis and often go to the nearby shop for buying this.

During the summer, we had two to three cream of tender coconut.  I was not willing to throw the same but no one was ready to eat it.  During summer, every body is crazy about drinking some cold drinks, tender coconut water,  eating ice cream and kulfis and do not want to eat any food.  Hence I thought of making this kulfi and turned out to be very tasty.

METHI SPROUTS SUBZI

Methi sprouts is one of the healthiest sprouts, good for diabetic people.  This is a diet friendly subzi.   The sprouts can be made at home.  After soaking the methi, you must wash thoroughly and keep the same covered to sprout.

OATS DOSA


When one is on the diet, have to follow the dishes of healthy and diet friendly.  Oats helps in controlling cholestrol and makes a good breakfast viz. poridge with milk or butter milk, with some fruits and milk, dosa, idli etc.

I decided to make oats dosa today for the breakfast.  It is very easy to make and tasty too with sambhar and chutney.

TOMATO ONION CHUTNEY

Tomato onion chutney is a good accompaniment along with dosa, idli, uttappa etc.  It can be had with rice too.  this is a diet friendly dish.

If you do not have coconut at home or if you want a diet friendly chutney, you can opt for this.  This can be made instantly as tomatoes and onions are always available at home.
