OATS KHEER

I always crave for some sweets after my lunch and dinner.  I must atleast eat some sugar if I do not have any sweet items in store.  Today, while preparing oats porridge for my dear hubby, I thought I will make kheer out of oats.  There was a piece of red pumpkin after cutting  the veggies for Avial.  Hence made use of the pumpkin along with oats.  There was also a tablespoon of Pal theratipal (milk reduced).  everything mixed became a very tasty flavourful kheer which I am sharing with you. The addition of nuts make this kheer even more tasty.

CONDENSED MILK

Condensed milk is used in almost all the sweetmeats.  It is very easy to prepare at home without much hassles.  If you run out of your stock of the store bought condensed milk, do not worry, you can try this recipe and will forget buying the store ones.

I wanted to make the tender coconut falooda and the stock was over.   I thought of trying it at home as one of my friend who had gone to cooking class  shared the recipes which she had.  The ingredients are easily available at home and can be made within 45 minutes maximum.

MANGO SHEERA

Sheera is liked by everyone, especially when it is made for the Satyanarayana Pooja, I loved to eat this prasadam.  Even if I am not invited for the pooja, I always get the chance to have this prasadam.  My daughter loves sheera which is made by me and in her school, the children grab the tiffin box for the sheera.

Now the mango season is on, I thought of making mango sheera which turned out very well.  It is a lovely dish to serve during feast too.   I have already posted various dishes of mangoes viz. mango lassi, mango ice cream,  mango burfi, mango jam, mango milk shake,  mango katli, mango kadhi, mango tender coconut drink etc.

BROWN RICE TENDER COCONUT KHEER

Today is the Tamil New year and tomorrow Vishu.  Wishing all viewers, friends and relatives a Very Happy New Year and Vishu.

Today, I prepared this kheer and was liked by everyone.  I was bored of cooking the normal kheer and want to cook something different.  I had made the Kanji and Venni  today which is made for the Vishu.  I was also having the tender coconut pulp after making the Mango tender coconut drink, so thought of combining these two things and making the kheer out of it.

Today I was having holiday, I thought of making it today itself as I have to hurry up tomorrow and may not be in a position to cook everything.

Enjoy the different variety of kheer.

PANCHAMRUTAM

Hi viewers,

I have the pleasure in posting my 500th post today.  It has been a nice blogging journey since 5th May 2013 and still 23 days more  to celebrate  the blogs First Birthday.

The journey began with the support of Ms Dahlia Twinkle and Kavery Venkatesh and of course with my dear hubsand, son, daughter and my lovely neighbours as judges.  A Big thanks to all of them for the support, suggestions, criticism, advise etc. etc.

A BIG SPECIAL THANKS TO ALL MY VIEWERS  specially  for their suggestions/comments and support without which the journey would have been incomplete.

I started my recipe with the King of fruit Mango and posting the 500th post also with a fruit recipe.

Panchamrutam is made normally for the neivedyam.  It is also used for abhishekam of gods in the temple.  A simple and easy preparation with fully ripe bananas along with some khajur, kalkandu, elaichi powder, jaggery,  it is awesome.  my children loves this to eat as it is chilled minus certain fruits added in it  if it is brought from the temple after the pradosha pooja.  I make this for them in a simple manner but you can add other fruits, if you wish.

TENDER COCONUT KHEER (SECOND METHOD)

I have already posted one kind of tender coconut kheer or elaneer payasam.  This is another method of preparing this lovely kheer.  This kheer has to be served cold, the taste is yummy.

Sweet items are always liked by everyone. When natural things are added to the dish, it has got a different taste and value for it nutritionally.  This natural summer cooler and healthy elaneer added to the roasted rice flour, milk is very delicious and would be a unique dish for your party.

PETHE KI KHEER

I never used to like sweet items in my childhood.  I was a fan of all spicy items and never used to leave a chance whenever I get it.  After my marriage, I started eating sweets little bit and now I crave for them immediately after my lunch or dinner.  My mother in law and my husband eats lots of sweets and she also makes a variety of sweets.  Staying with her more than 18 years, I have become crazy  now for sweets.

One of my friend who shared this recipe with me said that you taste this, will remember me for ever.  I had kept the Pethe in the fridge for a long time, somehow I could not make it.  Recently, I decided that I must finish it off with this recipe now.  Tell you it was fantastic.  Thanks to my dear friend for this lovely recipe.  It is very simple and easy to make.

You must be familiar with the Agra ki pethe.  Pethe is prepared with white pumpkin (ashgourd) and sugar. You can also use the matured white pumpkin for making the kheer if you cannot get the pethe.

SEMIYA KESARI, SEVAI KESARI

Kesari is a sweet dish made with flavours viz. pineapple or plain.  This dish is normally seen serving for any occasions or festivals.  In Tamil Nadu, this dish is part of the feast.

Sweet items are always liked by everyone, espcially, when it is mild in sweets considering the health issues.  Kesari/Sheera is made with rava also.  Here I am preparing the kesari with semiya.  Roasted ready made sevai is available in the market hence need not take any pain to roast the same.

The preparation method is like we make other Kesari but only the main ingredient i.e. suji/rava is replaced with semolina.

JACKFRUIT KHEER, CHAKKA PRADHAMAN, JACKFRUIT PAYASAM

Jackfruit kheer, jackfruit payasam, chakka pradhaman whatever you call is a very delicious kheer made out of jackfruit, jaggery and coconut milk with fried coconut bits in it adds flavour to it.  We can make jackfruit jam and preserve it.  whenever we want, we can make pradhaman out of it.  It is a part of occasion, feast in Kerala as jackfruit is available in abundance.  Here I have made the kheer with only 3 pcs of jackfruit which will suffice only for one person.

JACKFRUIT JAM, CHAKKA VARATTI

Jack fruit jam is made and preserved in fridge during the season.  It is quite a hectic job to make this as it will splash around all over when you are making in bulk.  Still the effort is work as the jam is very delicious.  The same can be served with adai, as a bread spread and can make kheer (pradhaman ), elai appam etc.  out of it. Jackfruit kheer or chakka pradhaman is a famous payasam of Kerala.

Here I am giving you a recipe of very very small quantity

IDICHU PIZHINJA PAYASAM, CHADHACHADAYAM, RICE KHEER WITH COCONUT MILK

This kheer or payasam is very special during Shasta preeti.  Shasta preeti is conducted in praise of Lord Ayyappa  during the Sabarimala season.  The pilgrimage begins in the month of November and ends in January.   Mandala pooja and Makaravilakku are the main events during the piligrims.   The Makarajyoti coincide with Makar Sankrant.

The blend of coconut milk with rice and jaggery  is mouth watering and one cannot forget the taste of it.  I love this kheer as it has got a very special aroma comes in especially when it is made during the pooja.

I always prefer to make the same with fresh coconut milk, but due to lack of time to go through the tedious process involved in it, I use the short cut i.e. prefer to use the store bought ones.
