I have already posted 3-4 items of vari tandul or sanwa or samo rice or bhagar or chama ari or moriyo it is called. Bhagar sarkara pongal moriyo-ven-pongal, moriyo-dosa bhagar dosa etc. Now I am presenting the Bhagar milk kheer. Very easy to prepare, healthy and a nice dish for fasting day.
Let us look at the recipe now:
Ingredients:
1/2 cup bhagar
1 ltr milk
1 tbsp ghee
1/2 cup to 3/4 cup sugar (increase decrease as per your requirement)
4 cashewnuts broken into pieces.
3 badam,
3 pista
1/4 tsp cardamom powder
few strands of saffron.
Method:
Soak the badam, pista in hot water. remove the skin and chop very finely. Wash and keep aside the bhagar. In a pressure cooker add the bhagar, milk, sugar, saffron strands and cook the same. Just before the first whistle comes, switch off gas and allow to remain in the gas. when the pressure subsides, transfer the same to a thick bottom vessel and cook for 10 minutes by continuously stirring to ensure that it does not stick to the bottom of the vessel. In the meantime, fry the cashews in the ghee and keep aside. When the kheer becomes slightly thick in consistency, remove from gas. Garnish with the dry fruits and serve hot or cold as you like.
