BANANA WALNUT CAKE (EGGLESS) l Cakes/bakes

Now my adventurous journey has begun with trying out bakery products.  One of my colleague gave me this recipe yesterday and I was sure that I am going to try this today without eggs.  She gave me a version with egg.  I used Flaxeeds in place of egg and the end product was awesome. The taste of banana and walnut in it makes the cake very yummy.



Let us look at the recipe now:

Ingredients:

1 cup maida (plain flour)
3/4 cup powdered sugar
1/2 cup butter
1/4 tsp soda - bi - carb
1/2 tsp baking powder
a pinchof salt
1/4 cup chopped walnuts
1 cup mashed ripe bananas (I used the safed velchi banana) you can use the normal banana.
2 tbsp flaxseed
2 tbsp milk

Method:

1.  Peel the banana and mash it nicely with hand to make a pulp out of it.  Keep aside.
2.  Sift the maida, soda, baking powder and salt together and keep aside.
3.  In a bowl, beat sugar, butter till light and fluffy.
4.  Grind the flaxseed in mixer to make a powder then add 6 tbsp water and grind again to make a paste out of it. Fold in the flaxseed paste and maida alternately.  Now fold in the mashed banana, milk  and walnuts.
5.   Grease a cake tin, dust with little flour.  Pour the mixture in the prepared tin. tap it to make it evenly.
6.  Preheat oven to 180 degree for 2 minutes and bake the cake for 50 minutes or till it is baked.
7.   check whether it is  baked or not by inserting a toothpick of knife.  when it is done, remove from the oven and cool it.  transfer it to a cooling rack, cut and serve.
