WATER MELON CHUTNEY

During summer season, we always buy lots of water melon and I used to preserve the white portion of it to make varieties of dishes out of it.   the link is here:    Rasam, curry, juice kootu,  kheer, dosa   halva, pickle.

The most liked one was the halva which I had sent to my husband's office for his birthday.  The chutney made out of the white portion of the water melon was very tasty with the dosa today.   You can always try some different varieties when you are bored of the regular chutneys served.

 Let us look at the recipe now:


Time taken:  30 minutes total
serves: 2-3

Ingredients:

1/2 cup white portion of the water melon chopped.
2 tbsp grated coconut
a small piece of ginger
2 tbsp chopped coriander leaves
3-4 green chilli (spice adjust according to your requirement)
3-4 leaves of pudina
salt
a small piece of tamarind.
2 tsp oil

tempering:

1 tsp oil
1 tsp mustard seeds
1 red chilli broken
few curry leaves

Method:

1.  Heat oil in kadai.  add the water melon pieces, green chilli and saute till soft.

2. Allow to cool.  grind together the watermelon, coconut, ginger, coriander leaves, pudina, tamarind, salt etc.  Add water according to the consistency required by you. 
3.  Temper with the ingredients under tempering.

How to serve:

serve with idli, dosa, ven pongal etc.
