Aloe vera has got many medicinal values. I had already shared a recipe with methi sprouts and tender coconut with www.simpleindianrecipes.com. I have shared around 100 recipes with her which you can see in User's recipe in Raji Ramakrishnan's recipe.
Today I prepared the aloe vera with aloo and capsicum and was good with phulka.
Now a days aloe vera is grown in balcony. So it will not be difficult for you to get the same. Aloo is always available at home and the onions. Hence making this subzi is very easy.
Let us look at the recipe now:
Ingredients:
1 small aloo
1/4 cup aloe vera ( Iused around 2 sticks of aloe vera)
1/4 capsicum chopped
1 tbs tomato paste
1 tsp pav bhaji masala
1/2 tsp red chilli powder
1 small piece of carrot chopped
1/4 tsp haldi powder
1 tsp dhania powder
salt
1 onion sliced
Tempering:
1 tsp mustard seeds
1/4 tsp cumin seeds
2 tsp oil
Garnishing:
coriander leaves chopped.
Method:
1.Boil the aloo,peel and cut into cubes. Remove the skin of aloe vera and take out the inner white portion and cut into small pieces.
2. Heat oil in kadai, add the mustard seeds when it splutter, add the cumin seeds, when it sizzles, add the onion and saute till translucent.
3. Add the capsicum, carrot, aloo and saute well for few minutes.
4. Add the tomato paste, masla powder, salt, mix well and cook till the vegetables are tender.
How to serve:
Garnish with chopped coriander leaves, grated coconut etc. and serve hot with phulka, chapati.
