SEV KHAMANI

Sev Khamani is a popular  dish from Surat hence the name Surti Sev Khamani.  It is a popular Gujarati dish which can be served as a snack or as a breakfast. 

Basically, it is made out of chana dal.  But  I have used the moongdal for making this dish. I have made it very simple so that you can also follow the same method for making it easily at home.

It takes a lot of time (for soaking the chana dal for 4 to 5 hours), grind it,steam it and then cook it with tempering.  But the hard work is fruitful as you would love to eat again and again.

Now let us look at the recipe with the Moongdal.  Shall post the recipe with chana dal soon.
Surti Sev Khamani




Ingredients:

1/4 cup moong dal
1 green chilli
a small piece of ginger
1/4 cup curd
salt
1/4 tsp turmeric powder

tempering:

3 - 4 tsp oil
1 tsp mustard seeds
a generous pinch of asafoetida
few curry leaves

garnishing;

chopped coriander leaves, grated coconut, nylon sev and pomegranate seeds.

Method:

1.  Soak the moongdal for 1-2 hours.
2.  Drain the water.
3.  Put the moongdal, green chilli, ginger in the mixer along with the curd and grind to a coarse paste.
4.  Add salt, turmeric powder, mix well.
5.  In a kadai boil water.  Put the ground mixer in a greased plate and steam cook the same.
6.  Allow to cool.  crumble the same with your hands.
7.  Heat oil in kadai. Add the mustard seeds, hing powder, curry leaves.
8.  Put the crumbled khamani in it and saute for two to three minutes.
9.  Transfer to a serving bowl
10. Garnish with the ingredients mentioned under garnishing.

How to serve:

serve along with green chutney.  Put the sev while serving otherwise it will become soggy.

ALTERNATIVELY we can prepare  the same after the tempering is done directly in the kadai till the same is cooked.
