Sabudana khichadi is an Indian Dish made from soaked Sabudana also known as sago, javarisi, etc. It is usually prepared in western parts of India especially in Gujarat and Maharashtra. In the major towns of Maharashtra like Mumbai, Pune and Nagpur, it is available as street food and is widely enjoyed by everyone throughout the year.
It is the dish of choice when somebody is observing a fast during Navratri. This is made from Tapioca and the pearls are soaked in water overnight and then cooked with cumin seeds, Rock salt, red chili powder, green chillies and other optional ingredients such as fried peanuts etc. It is known as Khichdi and garnished with coriander leaves.

Let us look at the recipe now:
Preparation time: 10 minutes
Cooking time: 15 minutes
Serves: 2
Ingredients:
1 cup sabu dana
3 tbsp crushed roasted peanuts
1 medium size onion chopped
1 green chilli chopped
1 tsp mustard seeds
1 /4 tsp cumin seeds
Salt as per taste
¼ tsp sugar
3-4 tbsp oil (1tsp ghee can be used)

Method:
1. Soak the sabudana in water overnight. I used the small grain ones. (in the video i have taken the normal ones). Ensure what level is just above the sabu dana.
2. Heat oil in a kadai

3. Add mustard seeds and cumin seeds
4. When it splutters, add the chopped onion, green chilli and sauté till the onion is translucent. If you are using Potato, either you canuse boiled and mashed potatoes or cut the same into small cubes and fry it .

5. Add the sabudana, salt and mix well
6. Add the crushed peanuts, sugar again mix well and cover it for 5 minutes to cook
7. In between just keep on mixing it to ensure that it does not stick to the kadai.
8. Switch off stove.
How to serve:
Serve hot with sweetened curd, sauce or any chutney of your choice.

Tips: you can add potato also if you wish. Health conscious people be away from it.
