TOMATO PASTE (MASALA)


Tomato paste or tomato masala is prepared and kept in the fridge by me for making any tomato based gravy subzi.  It saves a lot of time if this is ready with you in the fridge like your ginger garlic paste, chilli paste etc.  though freshly prepared ones are always preferred, working women can opt for this method as it remains in the fridge for about a month, if handled properly.

This paste can be used for making tomato rice too.  Since the rice is favourite dish of my children, I always keep the paste in fridge. refer the link for tomato rice

Let us look at the recipe now:


Preparation time: 30 minutes.
Cooking time: 1 hour

Ingredients:

1 kg fully ripe tomato
1/2 kg onions
1/4 tsp turmeric powder
4 tbsp chilli powder (check the spice according to your taste add)
1/2 cup oil
4 tsp salt

since cutting tomatoes and onions takes a long time of large quantity, i preferred to chop the same in the food processor.

Method:

1.  Heat oil in a large kadai.
2.  when the oil becomes hot, add the chopped onions and saute for 5 minutes
3.  add the tomato puree in it, add turmeric powder
4.  Mix well and bring to a boil in medium  heat
5.  when the water contents in the paste reduces to half, add salt
6.  cook the same till the water evaporates fully.
7.  at this stage add the chilli powder and mix well till it starts leaving the kadai.

8.  cool it and transfer it to an airtight container and store in freezer.

Take out the required quantity as and when required and use it.  You can also make tomato puree and keep in fridge.  whenever you want, take out from freezer and keep out.  you can put them in ice tray, make cubes of it  and use it.
