Mix sprouts subzi is prepared with any kind of sprouts according to your choice, added some spicy masalas with chopped onion and tomatoes. Since the sprouts are rich in rich in protein, vitamins and minerals. Some of the vitamins that sprouts contain include Vitamin A, Vitamin C, Vitamin B1, Vitamin B6, and Vitamin K. Apart from this, it is also rich in minerals such as Iron, Phosphorous, Magnesium, Potassium, Manganese, and Calcium. As if these are not enough, sprouts also have dietary fiber, Folate, and Omega-3 fatty acids. Sprouting seeds, grains and legumes are found to have higher content of these nutrients. For instance, most beans increase in Vitamin A by eight times after being sprouted.

Serves: 2-3
Ingredients:
1 cup mix sprouts (u can choose according to your choice)
1 tomato finely chopped
2 medium size onion finely chopped
2 tsp mix masala (chilli powder, pav bhaji masala, garam masala, chole masala)
2 tsp oil
½ tsp cumin seeds
½ tsp ginger garlic paste
¼ tsp turmeric powder
Salt as per taste.
Garnishing:
Finely chopped coriander leaves and chopped onions.
Lime juice (optional)
Method:
1. Cook the mix sprouts in cooker for 1 whistle.
2. In the meantime, heat oil in kadai, add the cumin seeds.
3. When it splutters, add the onion and sauté till translucent.
4. Add the chopped tomatoes and cook the same till tomato is mushy
5. Add the turmeric powder, masalas in it and mix well.
6. Add the cooked sprouts, salt and cook the same for 10 minutes till such time the masalas are incorporated well in the sprouts.
7. Remove from gas, transfer to a bowl.
8. Serve hot with chopped coriander leaves and onion.
9. If you wish can add a dash of lime juice.
