TOMATO RICE

Tomato rice is prepared with plain rice and the tomato paste.  tomato paste is made with onion and tomato with red chilli powder in it.   How to make tomato paste: tomato paste.  We make various kind of rice  - lime rice, coconut rice, puliyodare, etc.

Tomato rice is one of the favourite dish in my house as my children prefer it any time.  It is very easy to make even if you do not have the tomato paste with you.

We need fully ripe red tomatoes for this then only the colour of the same will look beautiful and attractive.  So while choosing tomato for the tomato rice, kindly keep this in mind.

Preparation time:: 10 mts
cooking time: 30-35 mts
serves: 2


Ingredients:

1/2 cup rice
4 tbsp tomato paste
1 tsp roasted dhania powder (coriander)
1/4 tsp roasted cumin powder ( i use a generous pinch only)
salt as required
1 tsp oil
1 tsp mustard seeds.

Garnishing:

chopped coriander leaves.

Method:

1.  In a vessel boil water.
2.  wash thoroughly the rice
3.  when water starts boiling, add the rice in it.
4.  just boil it and keep the flame low to cook the same.
5.  it will take about 20 minutes.
6.  when the rice is cooked (ensure that it is not mushy), the grains should be separate.
7.  after straining the water, spread the rice on a plate.
8.  Heat oil in a kadai
9.  add the mustard seeds.  when it splutters, add the tomato paste and mix well.
10. now add the cooked rice, required amount of salt as we have put salt in the masala.
11. mix well.  add the roasted dhania powder  and cumin powder and mix again.
12.  garnish with the coriander leaves.


How to serve:

serve hot with papad, raita, wafers etc.

TIPS;  If you do not have the tomato paste, you can just grind the onion and tomato in a mixer and add after the mustard seeds splutter and cook the same till you get a paste, then add chilli powder.
