ALOO PARATHA (POTATO PARATHA)

STUFFED ALOO PARATHA



Aloo paratha with yoghurt and mango pickle.  I remember my ex boss who is no more now, a delhite, used to love parathas with mango pickle.  Once i gave him the mango pickle which i made, he said Raji, make two more bottles and give me, shall have it with aloo paratha and dahi.  since his family was in Delhi and he was staying in office quarters with another boss of mine.  whenever i make aloo paratha and mango pickle, i cannot forget him.

coming to the kitchen to make the parathas early in the morning in a hurry burry with too many things to do at a time, still the hot hot paratha directly from tava, it is yummy.

Normally when i make paratha, i used to mix the alloo, masala and the wheat flour together.  But recently,  i had the paratha in my friend's house on her wedding anniversary when i went to wish her, it was lovely.  so i decide to try for the first time in my life the stuffed aloo paratha and i loved it.

STUFFED ALOO PARATHA

Preparation time:  15-20 minutes
cooking time: 30 mts + 30 minutes  (boiling aloo takes 30 minutes in cooker)
serves: 3


Ingredients:

6 big potatoes (not too big)
2 cups of wheat flour
2 tsp coriander powder
1 tsp chilli powder
1/2 tsp ginger garlic paste
1 tsp dry mango powder
handful of chopped coriander
a generous pinch of asafoetida
salt as per taste
ghee


Method:

Boil the potatoes in cooker
peel them and smash ensure that no small pieces are left.
mix the masalas, salt, coriander leaves, asafoetida make 7 balls out of it  and keep aside

I prepared the dough in the food processor.
Make the dough the way you make for chapati and keep aside for 15 minutes.
make equal size portions  ( i made around 7 balls) as i was  in a hurry to go to office.
take one ball  of dough and apply dry flour and spread it with rolling pin. place the aloo ball on top of the puri and cover it  and roll out.

heat tava, apply little ghee  and place the rolled out paratha  on the tava.  when brown spots appears, flip it and cook both the sides. apply ghee on both the sides.



serve hot wth yoghurt, mango pickle, sauce etc.

since i had to rush to office, did not have the time to keep yoghurt and pickle along with it.
