LIME RICE (ELUMICHAI SADAM)

Lime rice or nimbu bhaath or elumichai sadam is flavoured rice with lime juice.  This is also known as one of the Chitrannams.

We make lot of rice preparations with lovely flavours viz. vegetable pulao, kichadi, okra rice, curd rice, lime rice, the list is endless.  In South side, varieties of rice are being made specially for the Aadi Peruku or Pathinettam Perukku during the month of Adi i.e. Mid July to Mid August.

 Lime rice is  very easy to make, can be served with papad, wafers etc.  If you have left over rice, it can be made easily.  what you need is green chilly, lime and curry leaves  in your hand.



Let us look at the recipe now:

Preparation time: 10 minutes
Cooking time: 10 minutes (with left over rice or if you have cooked the rice already ) 
Serves: 1

Ingredients:

1 bowl of cooked rice
Juice of ½ lime or as required
Salt as per taste
¼ tsp turmeric powder
1 tbsp peanuts (optional)

Tempering:

2 tbsp oil 
1 tsp mustard seeds(Kaduku, rai)
1 tsp Bengal gram (chana dal , kadala paruppu)
1 tsp urid dal (ulutham paruppu)
A pinch of asafetida.
Few curry leaves
A small piece of ginger finely chopped
1 green chilli finely chopped (adjust according  to your taste)

Garnishing:

chopped coriander leaves.


Method:

1.  Heat oil in a kadai, roast the peanut and keep aside
2.  Add mustard seeds, Bengal gram, urid dal
3.  When it splutters and the dal becomes brown in colour, add the green chilli, curry leaves, chopped ginger, asafoetida and mix well.
4.  Add the rice, salt, turmeric powder and mix well.
5.  Add the lime juice,  and again mix it.  .
6.  Switch off gas and keep  covered  for 5 minutes.

How to serve:

Serve hot or on room temperature.  While serving,  mix well again and garnish with chopped coriander leaves and roasted peanuts.
