TOMATO PULAO

Tomato pulao is a yummy rice variety with some veggies.  Today, I prepared the same for Lunch along with raita, papad, karuvadam etc.

As I was bored of eating chapati everyday and thinking of what to make as side dish for the chapati, for a change, I was thinking when my maid did not turn up for making chaptis, this dish for the last two days.

After  having a lovely time attending the  Happy Streets organised by Times of India  group, I was lazy to enter in the kitchen so made my day very easy by preparing this tomato pulao.  I have already posted tomato rice recipe in the blog.  You should have fully ripe tomato which is red in colour.





Let us look at the recipe now:

Preparation time: 30 minutes
Cooking time:30 minutes
serves: 3-4

Main Ingredients:

1 cup basmati rice
2 red tomatoes
2 medium size onion
1/2 cup coconut milk (i used store bought one)

Masala

1/2 tsp red chilli powder
1 tbps coriander powder
1 tej patta
3-4 pepper corns
1-2 pcs dalchini
3-4 cloves
1star anise

Vegetables:

3-4 french beans
1 small carrot
1 fistful of green peas
3-4 pieces of cauliflower
1/2 capsicum

Others
 

salt
5-6 pudina leaves
2 tbs ghee
2 tbs oil
1 tsp cumin seeds

Method:

Mix water in the coconut milk and makes 2 cups out of it.  Wash thoroughly the rice drain water and soak the rice in the coconut milk for 30 minutes.  after 30 minutes drain the coconut milk and keep aside.

Chop the vegetables into cubes.  Slice the onion.  chop the tomatoes, pudina leaves.  

Heat oil and ghee  in kadai.  Add the cumin seeds. when it sizzles, add the tej patta, cloves, dalchini, star anise, pepper corns etc.  when it is done, add the onion and saute till transparent.  now add the vegetables, pudina  and saute for few minutes.  add the chopped tomatoes and cook till mushy.  add in the red chilli powder, coriander powder and saute for few minutes.  Now add the drained rice, saute for few minutes.  add salt and the coconut milk measuring two cups.  keep the flame in medium, bring to boil.  when it starts boiling, reduce the flame, cover and cook till all the water is evaporated.  check in between.

when the water is completely dried up, switch off gas, keep covered. serve hot.

How to serve:

serve hot with any kind of raita, papad, wafers etc.

Note:

1)  you can use pulao masala
2)  you can add bit garam masala or pav bhaji masala.
