FALOODA

Falooda is a cold beverage popular in Indian subcontinent.  Traditionally, it is made with rose syrup, vermicelli, basil seeds (subja),tapioca pearls etc.  We can make mango falooda, rabdi falooda etc.  I had made and posted the tender coconut falooda.

Falooda is a version of persian dessert known as faloodeh and is believed to have brought to India during the Mughal period.   Vermicelli used for preparing faloodeh is made from arrowroot whereas vericelli used in the Indian version is usually made from wheat. 

Here I used the falooda  sev.  we can  use the normal vermicelli which is available in the market for making sevai upma, sevai kheer etc.

Anyway, it is very delicious and comforting during summer.  mango falooda with chocolate

Let us look at the recipe now:

Preparation time: 1 hr
cooking time: 7-8 minutes
serves: 4

Ingredients:

600 ml  chilled milk
50 gms falooda sev
8 tbsp rose syrup 
4 tsp sugar
4 scoop vanilla ice cream
4 - 6  tbsp soaked subja
dry fruits sliced if you wish

Method:

Boil 250 ml water. break the sev and put in the water and cook till tender. remove it in a sieve pass through cold water and allow to drain the excess water from it.  After the water is drained, add 4 tsp sugar, mix well and keep it in fridge.

take four tall glasses.  put 2 tbsp rose syrup in each glass.  divide the sev in equall parts and put one portion in the glass.  put the subja on top of it.  slowly add the milk around 150 ml.  place one scoop of ice cream gently on top of it. garnish with pistachios almonds etc.  serve immediately.

You need a straw and a spoon to enjoy this summer cooler.

 Note: do not worry if you do not get the falooda sev.  You can use the normal vermicelli which is available in the market.
