Mathan erissery is made with Red pumpkin. You need fully ripe pumpkin for this as the taste is awesome. You can also make the same with raw banana and yam or only with one of the vegetables.
This is basically prepared in a coconut sauce which is very very tasty and goes well with rice, chapati etc.
A speciality of Kerala and must for the feast.

Let us look at the recipe now:
Ingredients:
250 gms pumpkin cut into bite size cubes.
1/2 cup grated coconut
1 red chilli
1/4 tsp cumin seeds
salt
turmeric powder
Tempering:
1 tbsp grated coconut
1 tsp oil + 1 tsp oil
1 tsp mustard seeds
1 tsp urid dal
few curry leaves
2-3 broken red chilli
Method:
In a kadai, boil water and put the pumpkin pieces with salt and turmeric powder. Cook the same till soft.
grind the coconut, red chilli, cumin seeds and keep aside. when the pumpkin is cooked, add the ground coconut in it and bring to a boil, switch off the flame.
In another small kadai, heat oil, fry the coconut till brown. put it in the gravy. temper the mustard seeds, urid dal, curry leaves, red chilli, and add to the erissery.
serve hot with rice, chapati
