Dhokla is a vegetarian food item that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is made with a fermented batter derived from rice and split chickpeas. Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a snack with  Green and Sweet Chutney.

I happened to taste the Raswala Khaman which I liked very much and tried at home.  The result is YUMMY.

GRILLED MANGO CHUTNEY l CHUTTA MANGA CHUTNEY l MANGO CHUTNEY

During Mango Season, i.e. summer, you get lot of  Raw Mangoes.  We make pickle, Ada Mangai, Aam ka Panha, Use it for making Amchur Powder i.e. Dry Mango Powder etc. Another interesting recipe is Panha Thandai.

Here I prepared slightly different manner.  I grilled the same, removed the pulp.  Similarly, grill the Green chilli also.  If you wish you can use red chilli too but while grilling be careful.

DHUSKA BATTER DHOKLA l HOW TO MAKE DHOKLA WITH DHUSKA BATTER

Dhuska (clik  on Dhuska for link) is a street food of Jharkand.  It is made out of Rice, Bengal Gram and Urid dal.  It has got some similarity with the Adai of South Indian Cuisine.

After preparing the Dhuska, I had some left over batter which I used for making the Dhokla.

DOSA STUFFED WITH KUTCHI DABELI MASALA

We all are familiar with Masala dosa, Mysore Masala dosa.  Here is dosa stuffed with kutchi dabeli masala.


You are fond of dabeli right. If left over masala is there, do not worry what to do.  You can fill it on top of the dosa and enjoy it. Believe me, it was awesome.



Dabeli is a street food which can be enjoyed at any time. The basic masala ingredient is potato.  The chutneys makes it more tastier.

Khaman dhokla is basically made with gram flour.  A sweet , tangy super soft fluffy dish can be enjoyed at any time of the day with mint and sweet chutney. Gujarat's   famous dish anytime you can relish.

There are various ways of preparing it with curd etc, here I am sharing my friend Rinku's method of preparing this lovely dish.

My daughter and I am very fond of this dish and I make it very often. I also prepare the dhokla with rava,  idli batter etc.

UNDE KADUBU, PUNDI GATTI


My exploration of  Karnataka recipes is on.  Today I prepared the Unde Kadubu or known as Pundi Gatti. Normally, Tamilians and Malayalees  also prepare this rice dumplings either by grinding the rice (boiled rice)  or with the rice rava or idli rava.  The traditional pundi gatti is prepared by soaking and grinding the boiled rice.   However, this preparation   is a typical  Malnad style breakfast recipe and popular by name unde or unde kadubu or undlige. This is a plain version of unde kadubu prepared using rice and coconut.   We can also prepare Sweet and spicy version  according to your requirement which is known as Vella Kozhukkattai and Ulundu Kozhukkattai in Tamil version.  

This  is an easy, healthy and tasty breakfast  as the same is steamed and steamed foods are good for health.  It can be served with hot sambar or rasam or any kind of chutney.  I served it with an instant  rasam which is very  quick  and easy to prepare.  The recipe is given below.

DAHI PHULKI, GRAM FLOUR VADA IN YOGHURT


Dahi phulki is somewhat similar to the dahi vada but here it is prepared with besan i.e. gram flour/chickpea flour. The taste is entirely different as the main ingredient varies in it.   This dish is prepared during Ramadan and Eid.  

Since Ramadan is on 26th June 2017 i.e.  tomorrow, I thought of sharing this recipe with you all. so that you can relish this dish.   These vadas can be served with some chuntey and sauce too.

Preparation is very easy and can be served with or without chilling.  Here I am presenting the original method, but variations  can be adopted according to ones choice. Mustard oil is used, I used the normal cooking oil.

BER CHUTNEY



Ber or Bhor it is known as is a sweet and sour fruit which is available in Indian market during the period November to March. 

It brings back the childhood memory as we used to go to pluck this near the Krishnan temple at Pallanchathanur where my  grandfather used to stay.  During vacation,  we used to go there and our time pass is this among other mischievous activities. It is a nutrient fruit with antioxidant properties and stimulates your immune system.  It is also rich in Vitamin C, B vitamins, calcium, iron, and phosphorous. These nutrients will keep your skin healthy, and your scalp and hair in good  condition. 

Traditionally in India, the fruit is dried in the sun and the hard nuts are removed. Then, it is pounded with tamarind, red chillies, salt and jaggery.  In some parts of the Indian state of Tamil Nadu, fresh whole ripe fruit is crushed with the above ingredients and dried under the sun to make cakes called ilanthai vadai or regi vadiyalu ) (Telugu).  This vadai I happened to taste when I went to Marudamalai in Coimbatore.  I was fascinated with the shape and colour of this and the fact that never tasted before, I purchased it for tasting.  I really liked it.

Various shapes and colours of ber is available in the market now.  I happened to see the green big ones looks like green tomato and tastes bit like a green  apple.  I purchased the same and cut it for tasting.  I felt the mild sweetness in it and thought of biting a green apple.  I made chutney, subzi and molagootal/kootu out of this and was excellent though you will not be able to identify the taste separately as you will feel that you have made it with the chow chow.

IDICHAKKA BONDA, RAW JACKFRUIT BONDA





The season of jackfruit has started and it is time to relish the dishes made out of this.  The baby jackfruit thoran also known as tender jackfruit or idichakka in Malayalam is part of the Sadhya in Kerala Household.  Every Kerala house will have the tree of jackfruit, mango in the backyard and there is no need for them to go out and buy the same.


The fruit right from tender to ripe one is used for making thoran, curry, chips and sweet dishes and chakavarati.  Chakkavarati can be stored for a long time and made payasam out of it with coconut milk.


It is yummy and I remember my child hood days that we sit and peel lot of jackfruit bulbs to make the varatti.  Varatti is made with the fruit bulbs boiled, ground and jaggery is added to it to make it very thick along with some ghee so that it does not get spoiled and remain intact for a year definitely.  Before that it will get over.


Coming back to the recipe, I purchase a baby jackfruit, made thoran out of it and there were still 200 gms balance in it.  Hence I thought of trying the Bonda out of it and the Pakoda also.  Today I made both the dishes and really enjoyed  for my breakfast.


There is slight variation in the coating of the bonda as I used an easily available batter in our home.  Let us look at the recipe now:

PAV PATTICE WITH RAJMA MASALA

Pav made out of maida is used to serve along with Pav bhaji, Pav omlette, Vada etc.  The famous Maharashtrian Vada Pav and Pav Bhaji is lip smacking delicacies and available every nook and corner of the streets.

It is quite satisfying, filling and easily available.

While making the Hara Bhara Kabab, I felt like trying this recipe which I am sharing with you.  I had some cooked Rajma Masala with me and the Hara Bhara Kabab.  So I thought of trying this version and was liked by everyone.

Instead of Rajma Masala, you can also use some  spiced  masala vegetables, or the pizza topping veggies, cheese etc.  but I restricted myself only to the kabab, rajma masala, some spicy and sweet chutney with onions and nylon sev.  It is a wholesome meal as the vegetables, cheese, goes inside your tummy with the soft pav with lots of butter in it.

If you try this, you will definitely love the taste of it.

USLI STYLE PATRA

I have already posted patra or alu vadi it is known as.  Recently I posted the same  made with pumpkin leaves. 

As I was sharing the recipe with my friend Shubha, she said that they make alu vadi with tuvar dal paste which was quite interesting.  Since I was having  a bunch of  pumpkin leaves with me, I tried my hand on it and was a hit.  The tuvar dal paste  is made for  preparing usli with French beans or any other vegetables like carrot etc.  

Basically, the alu vadi is prepared with gram flour paste with spices and jaggery, I thought for a change will try this version and was liked by everyone at home.

It is a very good snack item any time and you will also love it after trying your hand on this.  If you want a spicy version, do not add jaggery.

PUMPKIN LEAVES PATRA

We make Patra with aloo leaves also known as Colacasia leaves, arbi leaves etc.  In Malayalam, we call it as Chembu Elai.  With this leaves, we make pulikootu, masiyal etc.

Patra is a Gujarati snack item made with this leaves and is quite tasty.  However, it is popular in Maharashtra also known as Alu Vadi.  it is made with spicy besan batter and tossed with sesame seeds and mustard seeds.   We can either deep fry or tava fry and serve it as it is or with chutneys, sauce etc.

Similarly, I tried the patra with Pumpkin leaves and turned out very nicely though it was my first attempt to make this today.

Most of the people are not aware that the pumpkin leaves are edible and can make various dishes out of it because it is not easily available in cities.  These are available in villages and village people make various dishes out of this and also with payar leaves (chowli leaves).  

 This snack can be served at any time.  After steaming, cool it and keep it in fridge,  you can use it within 2 days.  It remains in fridge for a week but I prefer to finish it off as soon as it is made.

DAL PAKWAN

Dal Pakwan is a Sindhi recipe which is quite filling.  Hence it is served as BRUNCH mostly.  I happened to taste this dish in a wedding and was fascinated by the taste of this dish.  The dal being hot with raw onions and sweet and green chutneys on top with quite a large amount of chopped coriander on top of it is mouth watering.


Since then I wanted to make this and post it on my blog but somehow I could not do it.  Last week I was having some time so decided to make this dish.  It is easy to make as we can make the Pakwan and keep ready in a day or two in advance and make the dal subsequently.  This is what exactly I did.

RAW BANANA VADA(NON FRIED)

Raw bananas are available always.  This vegetable can be used for making various subzis, chips and ripen, eat as fruit.  All the parts of  Banana Plants are used for cooking or for other purpose. Instead of potato, you can make use of banana.

I have prepared this vada so many times but could not post it.  Today being a holiday, want to make something hot for the breakfast hence I made this non fried vada as I had time to make it.

You have to cook the same in a non stick tava in low flame for 5-6 minutes.  Though you will not get the taste of deep fried vadas, since it is very healthy (non fried), you can once in a while enjoy this food too.

Though the potata vada is served with dry lasoon chutney or green and sweet chutney, Since I prefer to have brown bread than the PAV, we enjoyed it along with the brown bread.

KAIRI KI PARATHA

Kairi ki paratha  ( video  you tube) one of my colleague made and brought for lunch.  We used to sit together for lunch and share our dishes.  She had used the kacha pakka mango which is neither sour nor sweet.   It was a very simple preparation and tastes good.

Before this, I had made the same with raw mango which was sour and with the ripe mango and video had also made.  Since my children did not like it, I did not post it.   Since the season is on, I thought of sharing the recipe with you all.

Whenever I try a new dish, I make it with less quantity only and the measurement is given according to that.  You can increase the quantity according to your requirement if you liked the dish.

HORSEGRAM SHARBAT


Today I had cooked the kulith sprouts for making pani poori.  Instead of the normal ragda or moong sprouts or white watana, I tried the kulith sprouts and it tasted good.

After cooking the sprouts, I had 1/4 cup of stock of the same which I did not want to throw away.  So I made sharbat out of it and it tasted good.

Since the summer is on and it is very hot, this drinks is quite good for health.

Horsegram is or kulith or muthira it is called, is  rich in B-complex vitamins,  proteine and  highly nutritious. 
It is  commonly prescribed in ayurvedic medicine for conditions like difficult breathing, cough, gastric problems, ulcers, worm infections and excessive perspiration. Some alternative medicine experts even consider horse gram as a good remedy to control joints pain. It can be also used as a natural health tonic.    It tones up the digestive system and prevents acidity and flatulence. 

People suffering from spleen enlargement, colic and weak liver can also benefit from this plants medicinal properties. People with kidney stones, hypertension, gall stones also benefit from its intake.

IDLI RAVA NOMBU ADAI

Karadayan nombu adai is made for the Nombu by South Indians.  Normally, it is made with roasted rice flour  both  sweet and savory.  I tried the same with ragi  both savory and sweet and was quite good. 

Recently, one of my friend gave me the savory version  made with coarse ground rice.  It was quite tasty and hence I thought of trying with the idli rava.  I had a packet of rava lying in my fridge so I took the opportunity to try the same.  Since I did not have the stock of Karamani, I made it without that and was quite tasty.

Shall post the photographs after making the same with karamani (black eyed pea, lobia) shortly but presently posting the photo without that.  The preparation is very simple.

ALOO TOKRI CHAAT

Tokri means katori, wati,  bowl  or basket you can call it.  The tokris are made either with maida or with aloo.  here I am giving the recipe of aloo tokri.

I happened to have this item in one of the mall when we along with our neighbour, went out with the kids.  It was quite filling and yummy and since then I wanted to try this at home, but somehow, I could not do so till today.

Today I do not know somehow I felt, I must complete this task and decided to try  my hand on this.  Since I am preparing this for the first time, I was bit nervous as to whether it will come out perfectly or not.  Yes I did spoil the first two baskets and rest came out very well.

I prepared the chaat and gave to my daughter and had myself, I could not believe that I prepared this so nicely.  video link:  how to make   aloo tokri,  and  alooo tokri chaat.



Now let us look at the recipe now:


Yield: 6-7 depending upon the size of the strainer.
time taken: 45 minutes

Ingredients:

2 potatoes (old potatoes or wafer potatoes)
2 tbsp corn flour
1/4 tsp black pepper powder
salt

for the filling:

1/2 cup moong sprouts boiled in salt water for 3-4 minutes
1/2 cup chopped tomatoe
1/2 cup chopped onion
Sweet chutney
green chutney
1/2 cup curd with 1 to 2 tsp sugar mixed in it.
chaat masala
chopped coriander leaves
1/2 cup nylon sev
2 tbsp pomegranate (optional)
boiled and mashed potatoes (optional)
oil for deep frying

Other things you need:

2 tea strainer
(1 small and the other  small (should be able to keep inside the bigger one)

Method:

Wash, peel and grate the potatoes directly in water. wash them three to four times in fresh water and squeeze out the extra water.  Then put it in kitchen towel to remove excess water.



Now put them in a bowl, add the corn flour, salt, black pepper powder and mix well.  Heat oil in kadai.  the oil should be medium hot.  put the potato mix in the strainer and spread evenly.  Now press with the other strainer (smaller one) and put the strainer in the hot oil.  after a minute just lift the smaller strainer and see whether it  is sticking to the potato mix.   fry it till you get a light golden brown colour tokri.  remove from the oil, wait till the oil is strained and turn it and tap on the outside portion to remove the tokri or with the help of knife you can lightly push them out and remove the tokri.  Repeat the process for the remaining aloo mix and fry them.  keep it in airtight container.



In the ingredients picture, you can see the fried potatoes. the first batch did not come out properly and was broken.  This I used while making the chaat.

Now let us look at the preparation of chaat.

Place one tokri in a plate.  put some sprouts, onion, tomato.  put green chutney, sweet chutney, curd.  sprinkle some chaat masala on top of it.   put the fried potatoes, nylon sev.  garnish with pomegranate seeds, coriander leaves.  If you want more chutney and curd, add and serve immediately.  repeat the process for the remaining baskets.

Note:  since fried potatoes were there, I did not use the boiled ones.

We can also prepare the baskets with maida dough which we use for the samosas.
If you do not have the strainer, you can use steel /aluminium katoris for making the baskets  with maida dough and can bake it.
