KOOZH VADAGAM l KOOZH VADAM l KOOZH KARUVADAM

Koozh vadagam l Koozh Vadam l Koozh Karuvadam is prepared with Rice.  During summer season, the Vadam and appalams are made and stored it in airtight container which remains for years together.  

The Rice is ground to a smooth paste along with Green chilli or Red chilli.  You can opt out the chili if you wish.  Some people add lime juice, we don't.  You need the Chakli press for making this.  You can use the Thenkuzhal, Pakoda or the Star mould for making this.  Also the Omapodi mould.




Let us look at the recipe now :

Time taken:4-5 days
Water requirement :  1: 3 or 1: 4
The batter should cook well then only when we fry the vadagam, it will puff up else it will not be crunchy.

Ingredients:

1/2 Cup Rice
3-4 Green Chilli or Red chilli (according to the spice requirement, you can increase / decrease)
1 Tsp Cumin seeds or Sesame Seeds
Salt
2 Tbsp Oil

Method:

Step 1

Wash and soak the rice for 4-5 hours.  Grind to a smooth paste along with chilli.  Add Cumin Seeds or Seasome Seeds and keep it overnight for fermentation.  If you don't want to ferment, you can start preparing immediately. I prefer to ferment.

Step 2

Second day add 1/2 cup water to the batter, mix well and keep aside.  In a thick bottom vessel, boil  1 1/2 cup to 2 cups water.  Add the oil in it.  Pour the batter in it and mix well without forming lumps.
Check the salt and add if need be.  Since we have added the batter into the water, you might need little salt.  Keep on stirring in medium low flame till it thickens and glossy. Allow to cool.

Step 3

Spread the cloth or plastic sheet on the terrace.  Put the koozh in the chakli press by putting the mould as you wish and press it.  Continue the process till you finish the koozh. Sun dry the same for 3-4 days.  Store in airtight container.  Whenever you want, you can fry them.

Normally, we cook the koozh in the night and early morning we prepare the vadagam on a piece of cloth or plastic sheet.  Now the plastic sheets are banned everywhere, go back to the old custom of preparing on piece of cloth.  For removing it, sprinkle water at the back of the cloth, leave it for 2-3 minutes, you will be able to separate the same from the cloth.
