Thukpa is a Tibetan noodle soup which originated in the Eastern part of Tibet. Thenthuk is a famous variant among Tibetan and Himalayan people of Nepal. The dish is popular in various parts of Nepal and Bhutan and States like Sikkim, Assam, Nagaland, Arunachal Pradeshin North east India.
Numerous varieties of Thukpa in Tibetan tradition include: Thenthuk, Gyathuk, Npali, Pathug, Drethug. Nepalese Thukpa is influenced with the Indian Masalas like Red chilli powder, Garama Masala etc. which makes it more spicy. Normally for non veg chicken is used.
What I had when we were in Assam is a simple preparation. The recipe I took from the guy who served us I lost and I faintly remember the ingredients he mentioned and accordingly, I am preparing the same and sharing with you. It was non spicy (we asked for) and quiet tasty for the cold weather. Normally, it is prepared with Chicken. Here I am giving the Vegetable version. Non Veg eaters can make use of Chicken.
Let us look at the recipe now:
Total time taken: 1 hr
Serves: 4
Ingredients:
1 Tbsp oil
1 Onion sliced (you can use normal onion or the bulbs of spring onion.
1 Tsp Ginger grated
1 Tsp Garlic fined minced
1 Small carrot cut into roundels
1 Small Potato (I didnot use)
5-6 French Beans cut into 1/2" pcs.
Fistful of Cabbage chopped
2-3 Mushroom (optional)
1 Tbsp Sweet Corn
1-2 Spring onion greens chopped
2 Tbsp Tomato puree or 4 Tbsp Tomato Ketchup
1 Tsp Red Chilli Sauce
1/2 Tsp Soya Sauce
1/2 Tsp Black Pepper Powder
5-6 Palak leaves (optional)
Lime juice (optional)
Salt to taste
Egg Noodles / Hakka Noodles / Rice Noodles or Noodles of your choice
Method:
Step1
Boil Water with little Salt and oil in it. Put the Noodles and cook Al dente and remove the excess water and run through cold water, keep aside.
Step 2
Boil water with little Salt. Cook the vegetables like Beans, Carrot, Sweet Corn, Cabbage etc Do not over cook. Remove the vegetables and keep the stock.
Step 3
Mix the Soya Sauce, Ketchup, Red Chilli Sauce.
Step 4
Heat oil in kadai. Put the Garlic, saute for few seconds and add Ginger, saute. Add Onion bulbs, saute for few minutes. If you are using Mushroom, add chopped Mushroom, Saute and then add the cooked vegetables. Stir in the sauces, Add the vegetable stock and sufficient water. Put the Noodles, Black pepper powder, check for the salt and spices. If need be add. Add in the onion greens.
Thukpa is ready to serve
