MUSK MELON HALVA WITH COCONUT AND SUJI

I have already posted one musk melon halva recipe which can also be used as jam for bread and roti.  This recipe is with coconut and suji which is also very very tasty and easy to prepare but got very short shelf life.  Still it is worth trying. 




Musk melon halva with coconut and suji





Ingredients:

1 big musk melon
1/2 cup sugar
1/4 cup suji
1/4 cup dessicated coconut or fresh coconut crushed bit in mixer 
a pinch of cardamom powder
8-10  pistachios
a pinch of saffron colour, orange colour
4 tbsp  ghee

  Method:

Cut the melon, dessed, peel the skin and grate them.  you can see lot of water in it. do not throw away.  take out little juice, mix the colour in it.  In a kadai,  heat the ghee add suji and roast the same the way you roast it for sheera.  when it is done, add the coconut and roast for two minutes.  Now add the grated melon with the water, sugar and keep on stirring till you get a mass.  When it starts leaving the sides of the kadai, transfer the same to a greased plate and level it.  spread the chopped pistachios on top of it.  You can also use assorted chopped nuts.  allow to cool.  keep refrigerated for 3-4 hours.  cut them into desired shapes and serve.
