CARROT SPRING ONION SUBZI

Carrot, spring onion subzi is very easy to prepare. The fresh spring onions adds the flavour to the subzi.  Quick and easy subzi, even children can make it.  I ran out of subzi in the fridge and had a bunch of fresh spring onions with greens and two carrots.  Since I was alone at home, that was sufficient for me to have it with plain rice, and a gooseberry chutney.

Preparation time: 10 minutes
cooking time: 5 minutes
serves: 1

Ingredients:

2 medium size carrots
1 bunch sping onion (4-5 )
a pinch of turmeric powder
1 green chilli
1 tsp grated coconut
salt

Tempering;

1 tsp oil
1 tsp mustard seeds
1 tsp urid dal
1/4 tsp cumin seeds

Method:

Wash, peel and chop the carrots finely.  Wash and chop the spring onion with greens. chop the green chilli.   Heat oil in kadai.  add mustard seeds, urid dal, cumin seeds, when it is done, add the green chilli, saute for  few seconds.    now add the carrots and saute for two minutes.  add the onion with greens, add salt, turmeric powder, mix well cover and cook for another three months.  switch off gas and wait for 5 minutes.  garish with grated coconut and serve.  It can be served along with chapati, rice.
