Rice Starch, Kanji is very good for health. It can also be used as starch for the cotton clothes, washing hair, face, body etc. During my childhood, my mother used to keep the rice water (kanji) overnight and used for washing hair along with Shikakai powder.
Since the Kanji is beneficial, I thought of making sambar with the kanji. Let us look at the recipe now:

Ingredients:
2 cups of kanji (rice water)
5-6 shallots
1/2 cup cauliflower greens chopped.
1 tomato chopped
2 tbsp cooked dal (any dal, masoor, moong or tuvar)
2 tbsp sambar powder
a small piece of jaggery or half tsp sugar
2 tbsp tamarind pulp
1 garlic papad (Lijjat)
1 tsp ghee
salt
turmeric powder
tempering:
1 tsp ghee
1 tsp mustard seeds
few curry leaves
hing powder
1 bhor chilli
garnishing:
chopped coriander leaves.
Method:
soak the papad in the kanji.
heat ghee in kadi, add the shallots and saute till soft.
add the greens and saute
add the tamarind pulp and cook for a while
add the kanji, sambar powder, salt, turmeric and cook till the veggies are done.
add the dal and cook for few minutes
temper with the ingredients mentioned and garnish with coriander leaves.
serve hot with rice, chapati, phulka
