HARBARA LEAVES SUBZI

Harbara is fresh green chick pea.  I never tried the subzi with the leaves till such time I saw recently with the vendor, the fresh green leaves.  I asked him how to make subzi out of it, he explained to me the recipe which I am sharing with you.

Leafy vegetables are always healthy.  Why should not we try the seasonal vegetables?

Let us look at the recipe now:




Ingredients:

1 cup tender harbhara leaves
1 big onion chopped
1 tbsp oil,

1 tsp mustard seeds
1/4 tsp cumin seeds
1 tbsp crushed roasted peanut 
1 to 2 tbsp soaked moongdal
a generous pinch of hing
1/4 tsp turmeric powder
2 garlic cloves
1 green chili chopped
1 tbsp fresh scraped coconut
salt to taste
1/4 tsp sugar


Method:


Wash and finely chop the harbhara leaves.

 Heat oil in a kadai. 
Add crushed garlic. Saute till it  turns reddish brown. 
Then add mustard seeds, hing, turmeric and green chilies. Saute for few seconds.
 

Then add chopped harbhara leaves, moongdal  and saute over medium heat.
Once harbhara leaves  cooked and starts shrinking, add coconut, salt and sugar and peanut. Cook further for 2 minutes.  serve with sambhar rice, dal rice or phulka


Tips:

 
1) You can make the sabzi by using only harbhara leaves.
2) Garlic is must.
3) Add 2 tbsp  soaked moongdal.

4)  you can add curry powder in this to get completely dry subzi at the last stage.
5)  you can also add fresh boiled harbara with the greens.
