Spicy pickle is always a part of Indian cuisine. Basically, every Indian household have this in the store room viz. mango pickle, lime pickle, mix pickle, vegetable pickle, vadu mangai etc.
If you have a visitor and wants to serve pickle along with the dish you made and do not have any pickle at home (never happens in Indian household), then you can make any kind of pickle immediately provided you have the vegetables at home viz. carrot, cucumber, tomato, onion etc.
Here I tried the carrot pickle which can be made within 10 minutes time. Let us look at the recipe now:
Ingredients:
1 cup carrot grated
1 tbsp red chilli powder (adjust spice according to your requirement)
salt as required
1 tsp mustard seeds
1/4 tsp fenugreek seeds
a generous pinchof asafoetida
1 tbsp lime juice (optional)
1/4 cup oil
few curry leaves
Method:
Step 1
Heat oil in kadai. add the mustard seeds, fenugreek seeds. when it is done, add the curry leaves and asafoetida
Step 2
Switch off gas, remove the kadai from the stove top and add the grated carrot, chilli powder, salt in it and stir it. the raw taste of the red chilli will disappear because of the heat in the oil.
You can also wait for sometime to cool down the oil and then add.
Step 3
allow to cool for sometime. add the lime juice, stir well, keep covered for 10 minutes and start using it.
can serve with dal rice curd rice etc.
Note: You can also finely chop the carrot and pour the oil mixture in the carrot and add the chilli powder, salt, give a mix and keep aside for half an hour and use. it.
