LIME SEVAI, LIMBU SEVAI

Lime sevai is made out of sevai readily available.  I used Anil Brand sevai.  You can use also Concord Brand.   This sevai is made for the breakfast.  We can serve it with Morukootan, chutney, sambar etc.  Variegates of  sevai is made apart from lime sevai viz. coconut sevai, amaranth sevai, pickled sevai, plain sevai etc.  If you buy the ready made packet, it is very easy to prepare.  If you opt for the home made one, then the process is bit lengthy but the end product is heavenly.

Let us look at the recipe now:

INGREDIENTS:

100 gms cooked rice sevai
1 green chilli chopped
Juice of one lime
salt as required
a pinch of turmeric powder.


TEMPERING:

1 tsp mustard seeds
1 tsp urid dal
1/2 tsp chana dal
1 red chilli broken
few curry leaves
a pinch of hing powder
2 tbsp oil (reduce increase according to your requirement)

GARNISHING:

chopped coriander leaves.

METHOD:

Heat oil in kadai.  add the items mentioned under tempering .  when it is done, add the green chilli saute for a minute, then add sevai, salt, turmeric powder  as required.  Mix well.  add lime juice,mix well and cover it for two minutes.  switch off gas.  when you remove it for serving, add the chopped coriander leaves, serve with papad, wafers, chutney etc.



How to make sevai:

We get ready made sevai in the market.  take 100 gms of that.  Boil around 3 cups of water with  one tsp salt and oil.  put the sevai in it, switch off gas, cover and keep it for 5 minutes, drain the entire water.

Note:  You can  make coconut sevai, lime sevai or can serve with milk and sugar.
