JACKFRUIT SEED CUTLET

 
Season of Jackfruit will get over once the monsoon starts.  After the rain, it will not be as tasty as the one we get during the summer.  Now grab the opportunity to make the seasonal dishes before the monsoon starts.

Today, I prepared jack fruit seed cutlets which was very tasty.  The seeds are naturally sweet little bit and the cutlet was awesome.  We can use the seeds for making chips  (jack fruit seed  chips) and subzi too.  I had some seeds with me which I used for making the cutlet.

Total time taken: 1 hour
Yield : 12 small cutlets.


Ingredients:

1.       10-15 jackfruit seeds
2.       ¼ tsp chilli powder
3.       ¼ tsp garam masala powder
4.       One small potato
5.       ¼ cup rava or bread crumbs or vari tandul
6.       Oil for shallow frying
7.       Salt
8.       1 small carrot
9.       1 small onion
1        5-6 beans finely chopped
1.   1 tsp mustard seeds
1.   A pinch of hing powder

Method:

1.       Pressure cook the seeds and potato for 2 whistles in medium flame.
2.       Peel the skin of both and mash.  I put them in the mixer to make it uniformly crushed as some of them were very hard.
3.       Heat 2 tsp oil in kadai.  Add the chopped onion and sauté for few seconds.  Add little salt.
4.       Now add the finely chopped beans and sauté till they are soft.
5.       Grate the carrot and add to the vegetable and sauté for few seconds, remove from flame, allow to cool.
6.       Mix the vegetables, mashed seeds and potato and make a dough out of it.

7.       Pinch out lemon sized balls, flatten the same or shape according to your wish like heart shape or oblong, round or square.
8.       Coat them with rava or bread crumbs or vari tandul
9.       Heat a non stick tava, smear with oil, place the cutlet on the tava, add some oil, cook both the sides till they are done.
1.   Serve hot with green, sweet chutney, sauce etc.
