UNDHIYO

Undhiyo is a Gujarati dish prepared with varieties of subzis available.  During winter, this is prepared as the ingredients in it helps in keeping the body warm and also varieties of vegetables are consumed by one as it is available seasonally.


Undthiyo is a delicious dish which can be served with puri, phulka.  I tried my hands on it for the first time and was happy with the result as it tasted "Awesome"




While speaking about mix seasonal  vegetables,  Undhiyo is somewhat like the  South Indian Kavathu Puzhuku or Thalagam  (minus the Methi Muthia) made by Keralites and Tamilians during Thiruvathira along with  Thiruvathira Kali.   In Undiyo,surti papadi is used, whereas for the South Indian version, papadi i.e avarakka is used.


 I have posted both the above recipes and let us look at the undiyo  recipe now:





Let us look at the recipe now:

Ingredients:

65 gms Sweet potato
75 gms brinjal
90 gms suran, yam, chena
70 gms raw banana
100 gms surti papdi
20 gms fresh tuvar
70 gms peanut roasted
70 gms seasme seed white roasted
4 tsp oil
2 tsp grated coconut

Masala

1/4 cup roasted peanuts
1/ 4 cup sesame seeds 
1/3 cup dessicated coconut
5-6 green chilli 
2 tsp ginger paste
4 sprigs of green garlic chopped
1 tsp red chilli powder
1 tsp sugar
salt
lemon juice (optional)


Methi Muthia 

21/2 cup methi leaves
1/2 cup atta
1/2 cup besan
3 green chilli
1 tsp ginger paste 
1/4 tsp turmeric powder
1/4 tsp red chilli powder
1 tsp salt
2 tsp sugar
1 tsp lemon juice
3 tsp oil
Water
oil to fry 

Method:

First you make muthiyas and keep

 For this, mix all the ingredients and the oil and make a stiff dough out of it.  divide the dough  into small equal portions and  make oblong shape. or as you wish small balls out of .  Heat oil in kadai and fry them in medium flame till you get a golden brown muthias.

Masala Preparation:

Put the peanuts and sesame seeds in  mixer and make coarse powder.  take it in a bowl and put the other ingredients also and mix well.


Veg prepration:


cut the  banana, suran and sweet potato  into cubes or big pieces and you can fry them also in the oil and keep aside.  You can also use baby potatoes.   cut the brinjal with + sign on it and stuff some masalas in it and keep aside.   

Making Undhiyo:

1.  Heat oil in a pressure cooker.  add the vegetables except the stuffed one.  Put the remaining masalas in it, mix well.

2.  Add water till the veggies are covered, add salt, mix well.  now add the stuffed brinjal in it, do not stir as the maslas are likely to come out.

3.  Cover and cook for 2 whistles on medium  heat.  allow to go down the pressure by itself.  open the cover, add the fried muthia, the roasted sesame seeds and allow to simmer for five minutes in medium low heat. 

4.  Switch off gas,  add lemon juice, mix well, garnish with cilantro and coconut.

How to serve:

serve hot with roti, poori.


Note: if you fry the veggies, it enhances the taste and not will become mushy much.
