Kovakkai, ivy gourd, thenli, tindora it is known as. The white fleshy part of the thenli tastes like cucumber. We can make kootu, stir fry subzi, along with black chana and pickles too. It can be served as a side dish for chapati, rice etc.
This vegetable contains Vitamn C, also filled with the set of vitamins such as beta-carotene, Vitamin A, Vitamin B1 & B2, in addition the properties of anti-anaphylactic as well as anti-histaminic. It is believed that consumption of this veggie helps to lower fever. The prsence of anti oxidants in this veggie assists our body by eliminating various illness conditions, as per the study.
Let us look at the recipe now:
Preparation time: 20 minutes
cooking time: 15-20 minutes
serves: 2-3
Ingredients:
250 gms Ivy gourd
2 tbsp grated coconut
1/4 tsp cumin seeds
1 green chilli
salt
turmeric powder
Tempering:
1 tbsp oil
1 tsp mustard seeds
1 tsp urid dal
few curry leaves
1 red chilli broken
Method:
1. Wash the ivy gourds and wipe with dry cloth
2. Cut both the ends and chop them in roundels or lengthwise as you wish.
3. Heat 1/2 cup water in a kadai, put the ivygourds in it along with salt, turmeric powder and cook them till the water is evaporated.
4. Coarsely grind the coconut, green chilli, cumin seeds and keep aside.
5. Heat oil in kadai.
6. Add the mustard seeds. when it splutters, add the urid dal, curry leaves, red chilli broken.
7. Add this to the cooked ivy gourd
8. Add the ground coconut, mix well and allow keep in low flame for two minutes.
9. Ivy gourd poriyal is ready to serve.
How to serve:
Serve along with rice, chapati.
Another way of preparing the same is:
1. Heat oil in kadai. for this preparation, you need two more spoonful of oil.
2. Add the mustard seeds. when it splutters, add urid dal, curry leaves, broken chilli.
3. when it is done, add the ivy gourd, salt, turmeric and continuously saute the same till it is soft.
4. Add the ground coconut in it, mix well and serve hot.
NOTE: Instead of adding coconut, you can also add chilli powder and coriander powder.
