Dhirde is a traditional Maharashtrian dish and everyone will love this as its an amazing dish from tava to the plate. Though it is a popular dish in the region, you cannot find them on the menus in a hotel.
Normally, it is made with the gram flour but you can replace it with any other flour. I have made it in a more healthier way than the original dish. It can be served with plain yoghurt, thecha, tomato sauce spicy pudina chutney. If you are making it with rice flour, can be served with sambhar too. I prefer to have it with chunda.
Time taken: 1 hr
Yield: 8-9
Ingredients:
2 cups rice flour
1 cup grated lauki (dudhi, bottlegourd)
1 tsp soaked methi seeds
1 sprig curry leaves
1 fistful of coriander leaves
1 green chilli
1" pc ginger
2-3 garlic pods
1 sprig pudina
1 onion
a generous pinch of ajwain
1/4 tsp jeera (cumin seeds)
salt
oil
Method:
grind the curry leaves, methi seeds, pudina, green chilli, ginger, garlic pods, pudina, ajwain with little water and add to the grated lauki. mix in the rice flour, coriander leaves, salt. add water little by little to make a smooth dough. consistency of dosa batter.
chop the onion finely. heat a tava smear with little oil. take laddleful of batter and pour it on the tava and spread it like you spread the dosa. put some onion on top of it like you put it for uttappa. drizzle oil. cook both the sides. serve hot with chutney, chunda, pickle, yoghurt, sauce etc.
Note: this is a healthy dish since we are adding curry leaves, pudina, ginger, garlic, methi etc.
