PALAK PARATHA

Though I have made several times this paratha, have not posted the recipe.  Today, when I made the paratha, checked my blog and found that this was not posted, I thought I must make it today.  clicked the photographs fresh and posting.

Leafy vegetables are good for health.   Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium,  potassium, and vitamin C. It is a very good source of dietary fiber, phosphorus, vitamin B1, zinc, protein, and choline.

It is an easy paratha to make with much effort and tasty along with curd and pickle. This simple paratha is quite healthy too.




Let us look at the  recipe now:

Yield; 16 parathas

Ingredients:


3 cups wheat flour
1 cup palak puree (one bunch of palak)
1 tsp 3 G paste
1 tsp garam masala
2 tbsp curd
2 tbsp oil
1 tsp salt
a generous pinch of asafoetida
1/4 tsp ajwain
water as needed
oil or ghee for cooking paratha.

Method:

Wash, thoroughly the palak leaves by adding little salt.  salt helps in removing the worms any stuck to the leaves.  Boil water in a big vessesl and put the palak in it.  allow to boil for 2-3 minutes, remove from the water, run through cold water.

Now make puree of the same by putting it in mixer.  In a mixing bowl, add the flour, masalas, ajwain,  asafoetida,  salt, mix well.Now add the palak puree, curd in it and mix well.  add required amount of water and make a dough.  finally add the oil, mix well again and divide into equal portions.

Take one portion of dough, dust some flour and roll it out.  heat non stick tava cook both the sides by applying oil or ghee.

How to serve:

Serve hot with curd/pickle.
