Kothmir
or green coriander is very good for health.
The juice taken in empty stomach helps in reducing the sugar level in the body thus suggested for diabetic
patients. Otherwise also, it gives a
good taste and aroma in the subzi or dal or sambar.
The
chutney made out of this can be spread in bread while making sandwich, chaat
items etc.
The
subzi was quite tasty along with carrot.
Let
us look at the recipe now:
Preparation time: 10 minutes
Cooking time: less than 10
minutes
Serves: 2-3
Ingredients:
3 medium size carrots
1 bunch green coriander
1 green chilli
1 tsp angaya podi or dosamilagai podi or ½ tsp red chilli powder.
Salt
Turmeric powder
1 onion finely chopped
1 tsp oil
1 tsp mustard seeds
1 tsp urid dal
¼ tsp cumin seeds
Curry leaves
Method:
Clean the kothmir, use only
the tender stems. Wash, chop them finely. Chop the onion finely. Peel the
carrots and cut into small pieces. Heat
oil in kadai. Add the mustard seeds,
urid dal, cumin seeds, curry leaves.
When it is done, add the green chilli, sauté for few seconds. Add the onion, sauté for few seconds. Add the carrots, turmeric powder, salt,
sprinkle little water, cover and cook till soft. Now add the coriander leaves, angaya podi or
dosa milagai podi or red chilli powder, stir well.
Serve hot with chapatti,
phulka, rice etc.
