GOLD COINS, CRISPY BREAD WITH VEGGIES

Making snacks for the children is always a task as they do not want this, they do not want that.  What will you eat, something nice mumma.  I am always in search of making  something new for my children.  finally they end up with bread items.

Today I have made Gold coins.  It is nothing but bread cut into a circle filled with some veggies and prepared in microwave.  You can fill with any veggies of your choice.    what else is required.  a little bit of sauce.  so enjoy you too with a cup of tea.




Here comes the recipe:

Ingredients:

6 bread slices ( i used brown bread.  you can use thick white bread too)
2 tsp of butter + 2 tsp butter for applying on bread  (if you do not want to use butter, replace with oil)
1 finely chopped onion
1 medium size carrot grated
1 capsicum finely chopped
1/2 tsp soya sauce
2 tbsp boild sweet corns
1 tsp vinegar
1/2 tsp chilli sauce (optional  in case you use chilli powder)
1/2 tsp pepper powder
1/4 tsp red chilli powder (if you use chilli sauce - optional)
1 tsp white sesame seeds to sprinkle on top of the veggies.
salt as per taste

Tomato sauce.

Method:

1.  Wash the potatoes.
2.  put them in a zip lock bag/plastic bag,. do not lock the cover fully.  leave some space to pass the air through.
3.  Microwave the potatoes for 4 minutes. allow to stand for 5 minutes. cool, peel and mash it coarsely.
4.  In a microwave safe bowl, add the butter and onion and microwave  the same for 3 minutes.
5.  Now add the carrot, capsicum, potates, soya sauce, vinegar, salt, pepper, chilli powder and mix well.
6.  with a metal cutter or with steel bowl, cut the bread in rounds, apply butter  on both the sides lightly.
7.  spread the veggies in the middle, sprinkle white sesame seeds and press down to evenly spread the same on the bread.
8.  Pre heat microwave oven for 2 minutes at 180 degree C.  Place the grill rack in the pre heated oven.  Place the bread on the grill and cook the same for 12 minutes at 180 degree.
9.   dot with some sauce and serve hot.
