VEGETABLE KURMA

Veg Kurma is a side dish prepared with mixed vegetables with mild spice which can be served with Chapati, Idiyappam etc. and it is very rich in taste.  There are variations in each kurma recipe  as some people add cashews or roasted dal (pottu kadalai).   I decided to prepare my own way and it was a hit at home as well as my brother and family liked it very much.  I served it along with Idiyappam for the breakfast along with coconut milk and morukootan.

Since various vegetables can be used for making this dish, it is an added advantage for the parents to feed their children who are fussy in eating the vegetables.

Let us look at the recipe now:







                                                                Ingredients:

1 cup
Mix vegetables (beans, carrot, potato, cauliflower florets, green peas etc.
2 nos
Medium size onions finely sliced
1 tsp
Ginger garlic paste
1
Tomato finely chopped
¼ tsp
Turmeric powder
½ tsp
Red chilli powder
¼ tsp
Garam masala powder
1
Tej pata
1” stick
Cinnamon
4-5
Green cardamom
3-4
Cloves
½
Coconut – grated to extract milk
3 tbsp
oil

                                                                To grind:                                                             
6 nos
Cashewnuts
½ tsp
Fennel seeds
¼ tsp
Khus khus
2  nos
Green chilli
4 tbsp
Grated coconut

Garnishing: few coriander leaves

Method:

1.       In a pressure cooker, heat the oil.

2.       Put the tej pata, cloves, cardamom, cinnamon etc.

3.       Saute for few seconds to release the aroma of the ingredients.

4.       Add the onion sauté for few minutes

5.       Add the ginger garlic paste, sauté the same.

6.       Add the chopped tomato and sauté till mushy.

7.       Add the vegetables and sauté for 10 minutes.

8.       Add sufficient water to cook the vegetables with salt, turmeric powder, red chilli powder, garam masala etc. for 2 whistles in medium flame.

9.       When the pressure comes down, remove the same to a kadai.

10.   If you feel excess water is there in it, reduce it.

11.   Grind the ingredients mentioned under  TO GRIND with little water.

12.   Add this paste to the vegetables. Simmer for few minutes.

13.   Your veg korma is ready to serve.

14.   Extract the coconut milk from the grated coconut and keep ready.

How to serve:

Just before serving add the coconut milk and serve with Idiyappam, chapatti etc.

NOTE:   The spices are taken according to our requirement as we eat very less spice.  You can increase it according to your requirement.
