SUBZ HARA MASALA

From the name itself, you can make out that the vegetables are cooked in green gravy.  subz means vegetables and hara masala means green masala or gravy.  Almost every day, you land up making the subzis in tomato onion based gravy so sometimes a change to the green gravy is always welcome.  the main ingredient in the masala being the coriander leaves which is good for the people who are suffering from diabetic.



Now let us look at the recipe now:



Serves: 2
time taken: 1 hr

Ingredients:

1 cup  mixed vegetables (beans, carrot, green peas, cauliflower, potato etc)
1 onion medium size chopped
1 tomato
1-2 tsp oil
1/4 tsp cumin seeds
1/4 tsp saunf
salt as per requirement.

Masala:

1 bunch of fresh coriander leaves
2-3 mint leaves
1 green chilli (if u want spicy, add more)
1 garlic clove
1/2 inch ginger piece
1 tsp grated coconut

Method:

cut the vegetables into cubes.  french beans into 1/2 " pcs. remove small florets of cauliflower.  steam cook all the vegetables.  Boil water in kadai.  keep a plate with whole in it so that the steam is passed evenly.  keep the vegetables on it, cover and cook for about 5-10 minutes.

Grind all the masala items into a paste by adding little water.

Heat oil in kadai.  add the jeera and saunf.  when it is done, add the chopped onion and saute till they turn golden brown.  Now add the chopped tomatoes and cook till the same is soft.  Now add the masala and saute for 2-3 minutes or the raw smell of the masala goes off.

Now add the steamed vegetables, salt and a 3/4 to 1 cup water.  cover and allow to cook for 5 minutes.  consistency of the gravy to be adjusted by adding water  according to your requirement  Your sub hara masala is ready to serve.

How to serve;

serve with roti, phulka
