PANEER ZAIKEDAR

Paneer zaikedar of zaikedar paneer means delicious paneer.  This is made basically with paneer spring onion,  peas and spices.   Very easy to make, delicious and can be served with Paratha, Roti or Pav or bread toasted with butter on tava.  

This recipe was shared with me by one of my colleague and I prepared the same for roti.






Let us look at the recipe now:

Ingredients:

2 cups paneer cubes (I used home made paneer)
1 tsp red chilli powder (adjust according to your taste)
1/2 tsp turmeric powder
1 tsp coriander powder
2 tbsp boiled peas (optional)
1/2 tsp cumin powder
2 spring onions
1 green chilli slit
1 tbsp greens of spring onion
1 tbsp coriander leaves chopped
1 tsp garam masala
1/2 tsp ginger julien
1 cup thick yoghur (curd)
3 tbsp tomato soup powder
3 tbsp oil
salt to taste

Method:

Cut the paneer into cubes.  place them in a plate.  Sprinkle the turmeric powder, coriander powder, cumin powder, chilli powder and salt.  Mix well softly.  Stir curd with a spoon or fork and spread over the paneer.  Mix with fingers gently.

Heat oil in flat non stick pan.  add the paneer mix and allow to cook for 5-6 minutes or till it is almost dried up.  Chop the spring onion and add them, green chillies, boiled peas and stir for sometime.  Mix the tomato soup powder with half cup of water and sprad over the paneer mix.  cook for 6-7 minutes turning it for few times.

 Cook till oil comes out separately from the mixture and dry it up.  Sprinkle garam masala and half of the chopped coriander leaves, sping onion leaves.

How to serve:

Serve hot with roti, paratha, toasted bread or pav with ghee by garnishing with the left over coriander leaves and ginger juliens on top.

Note:  I made it slightly in a gravy form as per my family requirement.
