Fresh Green Chikpeas or garbanzo beans or choliya or hara chana is known as in Mumbai is also called Harbara. This juicy tender fresh green chana is also a great snack. You can eat them raw or steam with some kala namak i.e Indian rock salt.
We can make subzi out of this, halva, poori and parathas too. This contains Vitamin C, E, K and B Complex vitamins,folate and the minerals viz. magnesium, zinc an pantothenic acid. They are high in dietary fibres too. Saute some in olive oil, put some sea salt and enjoy the taste. It can be tossed into stir fries, salads and combined with sweetcorn and green or red bell pepper also make an awesome chat.
I tried poori and paratha with it. It was awesome like any other parathas. Since we are getting the same during the season, we can enjoy it.
Now let us look at the recipe of making the halva
1/2 cup green chana (Choliya, harbara)
1/4 cup sugar
3-4 tbsp ghee
3/4 cup milk
2-3 tbsp khoya (optional) (I did not use)
Nuts:
Cashews, almonds, pistachios, 8-10 each.
2-3 green cardamoms
Method:
Step 1
remove the cardamom seeds and powder it. fry the cashew with little ghee. Blanch the almonds and pistachios in hot water and slice them.
Step 2
Wash the green chana,drain out water. transfer them into the mixer pot and grind to a smooth/coarse paste as you wish. You can add little milk while grinding.
Melt the ghee in kadai. Add the ground paste in it and saute till the colour changes and is cooked. You have to be very careful as it sticks to the bottom of the kadai. Continuously stir it. Ghee will start separating from the edges of the paste. Keep the flame on low and add milk, sugar in it. Keep on stirring and cook till the contents is thickened. Pour little ghee if required.
Step 3
Add the nuts, cardamom powder, mix well. your halva is ready.
Spread the chopped nuts on a greased plate, cup, or bowl as you wish. pour the halva on top of it. spread the halva. allow to cool. demould the same in a plate upside down. You will get the halva as mentioned in the picture abov.
cut them into desired shape.
How to serve:
You can serve them hot or cold as you wish.
