Baingan bharta is a famous North Indian dish served along with roti. The brinjal used for making this dish is used here for making the baked brinjal wth some tomatoes cooked with honey and sugar spread on top of it.
I always say that this is a vegetarian fish jokingly to my children. I love the brinjal curry, kootu, poricha kuzhambu with karamani, bharta, bhajia etc. made out of baingan ie.. brinjal. Since so many days, I wanted to make the brinjal marinated with some masala and baked.
Last week I got the opportunity to try this as I was having lot of time in the evening and had planned to make hence I had purchased the baingan.
Now let us look at the recipe now without wasting time much.
Ingredients:
1 Bharta Baingan
1/2 cup fresh thick curd
11/2 to 2 tsp tandoori masala
1 tsp chilli powder
3-4 green chilli
1 tsp dhania powder
1/4 tsp hing powder
1/4 tsp turmeric powder
salt
1 tsp saunf
Tomato Masala
2-3 big ripe tomatoes
1 tsp sugar
1 tsp red chilli powder
salt
3 tsp honey
Garnishing
Coriander leaves chopped.
Method:
1. Wash and slighly cut the baingan lengthwise to make a base to hold the baingan on the plate and apply oil on it.
2. Keep the cut piece and cut into lengthwise four to five pieces which can be seen in the picture.
3. Cut the baingn infact slice the baingan as shown in the picture without removing the same from the base.
4.To make the Masala Paste:
In a bowl, mix the curd, masalas, saunf and whisk to incorporate the masala well in the curd.
Keep the baingan pieces and green chilli in between the slices so that it is open for you to fill the masala in it.
5. With the help of spoon, fill the curd mix in the baingan.
6. In the preheated oven, bake it for 30-40 minutes till the same is cooked.
7. Tomato masala
chop the tomatoes. heat oil in kadai. add the tomatoes, salt, sugar and red chilli powder and cook till the tomatoes are mashed well. add honey and remove from gas.
8. Spread the tomato masala on top of the baingan, cut and serve with roti.
How to serve:
slice them garnished with coriander leaves and serve with roti.
