RAGI PINWHEEL IN RABDI

Ragi is a powerhouse of health benefiting nutrients that help in reducing weight and also acts as a treatment for multiple diseases like Brittle Bones, Osteoporosis, Anaemia and Diabetes. It is a natural relaxant that helps in relieving stress and anxiety. It is one such rare cereal that doesn’t need to be polished and, therefore, can be consumed in its purest form with all its goodness intact.  Ragi is one of the best natural protein sources. It is also rich in health benefiting amino acids and mineral like Calcium, Iron, Niacin, Thiamin and Riboflavin. The high level of dietary fiber in this cereal aids in proper digestion, normal bowel movement and prevents constipation. The insoluble fibers present in Ragi assists movement of food through the intestines while the insoluble fibers retain water thereby easing the passage of waste.  Include it to your daily diet in order to protect your digestive system and avert risks of constipation and other digestive disorders.


Everyone love to eat a dessert after the meal.  Whether they are at home or in a party or a wedding or any other function, without a sweet, the function is incomplete.

Here I am presenting this recipe which I tried for my mentor Ms.Dahlia Twinkle who was keen on participating in a competition with the products of Aachi.   I do not know whether she has opted for this recipe or not, but when I tried this, I could not resist myself and prepared the same on the second day too.

Let us look at the recipe now which I made  with Ragi.   It is a simple preparation and healthy too.



total Time taken: 1 hr 30 minutes
makes:  2 pan cake
serves:  3-4

Ingredients:

1/4 cup ragi powder
a  pinch salt
a pinch of cooking soda
1 egg

2 tsp ghee for making pan cake


Filling:

1/4 cup jaggery
1/2 cup grated coconut
a generous pinch of cardamom powder



garnish:

4-5 almonds slivered or sliced
4-6 pista slivered or sliced.


for rabdi:

1/2 ltr milk
3-4 tsp sugar
a pinch of cardamom powder


Method:

Batter for pan cake:

Break the egg, beat the same and keep aside. In a bowl, put the ragi powder, salt, soda, egg and mix it.  add little water to make the batter.


Preparation of Filling:

Put the jaggery in kadai and little water and heat it. allow to melt the jaggery.  strain and remove impurities, if any.  put the syrup in the kadai, add the grated coconut, cardamom powder and mix well.  allow to cook till the water is evaporated and you get a mass of the filling like we make it for modak.  Keep aside.




Preparation of rabdi:

put half litre of milk in a thick bottom pan.  add the sugar and cook till the milk is reduced to the consistency of rabdi.  It took nearly 45 minutes for me as I had kept in very low flame. 


Now Preparation of pan cake:

Heat a non stick tava, take laddleful of batter and put the same on tava and spread it like you spread it for dosa.  drizzle some ghee on it.  when it is cooked, flip it and cook the other side also.


remove from the tava and put it on a plate.    spread half of the filling on the pan cake starting from one side till 3/4 of the pan cake.  start rolling the same  and keep aside.



repeat the process for the second pan cake and make the same too, roll and keep it.  Now cut both the ends of the pan cake and cut the same into 1" pieces. 


Put the rabdi in a bowl.  slowly take out the pieces and place it in the rabdi.  garnish with the sliced or slivered almonds, pistas and serve. 


Note:  While placing the pieces in the rabdi, ensure that the sides do not open up.  You can also add roasted and crushed peanut with the coconut, dry fruits etc. 

you can use dry fruits in the filling too.
