Pav bhaji is the special street food of Mumbai liked by one and all. Atleast once in a month, get out of the house to have this tasty and yummy pav bhaji is a regular feature in Mumbai ofcourse, you cannot ignore the pani puri, bhelpuri, dahi puri and ragda pattice. click for pav bhaji recipe here.
Even though, we make it at home tastier, the street food still attract us.
Amla or gooseberry is storehouse of Vitamin C. this is also used for various medicinal purpose. amla juice, amla pickle, amla thoku, amla rice are certain dishes made out of it.
Coming back to the recipe, when I was in the market, had bought a kilo of amla and kept in the fridge. due to lack of time, could not do anything and was lying in the fridge. Today being Friday, in a relaxed mood as I do not have to get up early to go to office, thought of trying this dish and was quite happy with the outcome.
Let us have a look at the recipe now:
Ingredients:
5-6 amla big size
A small piece 1" bottle gourd (dudhi, lauki)
1 medium size carrot
1 big size potato
5-6 beans
3-4 florets of cauliflower
1/2 tsp ginger garlic paste
a handful of green peas
1/2 beetroot
3 big onions
3 ripe tomatoes
turmeric powder
salt
2 tbs butter
2 tbs oil
Masala
2 tsp pav bhaji masala
1/2 tsp red chilli powder
spice level adjust according to your requirement.
Garnishing
Chopped coriander leaves
while serving:
chopped onions
Laadi Pav - 1 (of six pieces)
Butter for making pav
Method:
wash and chop all the vegetables very finely. chop onion and tomatoes and keep aside. cut the amla, remove seeds.
pressure cook the vegetables, amla for 6-7 whistles so that it is nicely cooked and able to smash it easily.
Heat oil and butter in a kadai, add 3/4 of the chopped onions and saute for few minutes. add the ginger garlic paste and saute for a minute. Now add 3/4 of the chopped tomatoes and cook the same till it is mushy. add the turmeric powder, red chilli power and pav bhaji masala, salt and stir well. Take out the vegetables from the cooker, smash them well with a smasher and add to the masala and cook for another 2-3 minutes. Now add the remaining tomatoes and cook them well. ensure that the vegetables are fully mashed. transfer it in a bowl.
Now heat the tava, cut the pav and apply butter on both the sides and cook it till brown spots appears in it. serve with hot bhaji with a blob of butter garnished with coriander leaves, chopped onion.
Since the amla is good for health, you can make this once in a while and I am sure, you will like it.

ALTERNATELY:
You can grind the onion and tomato, ginger and garlic, keep separately.
grind all the vegetables and keep aside.
Heat oil / butter in kadai. add the tomato onion paste saute for 5 minutes. Now add the vegetable puree and saute for 5-8 minutes. the raw taste should go off. add the turmeric powder, red chilli powder, pav bhaji masala, salt, and cook for few minutes. add sufficient water and pressure cook for 2 whistles. when it cools down, remove, mash once again, serve hot garnished with coriander, onion, and a blob of butter ofcourse.
No need of onion as it is bit sour and take care of the usge of lemon in the pav bhaji
