CORIANDER UPMA

Upma is a simple, tasty and easy to prepare breakfast.  Along with chutney, sambar and choley, it tastes awesome.  I have posted few upma recipes.  Today, when I was preparing Rava upma, thought of some innovative method which is healthy too.  Since coriander leaves are good for diabetic people, thought of trying with it.  It was awesome and I liked to have to with onion raita and some pickle.

Let us look at the recipe now:

Ingredients:

1 cup rava
1/2 cup coriander leaves
8-10 cashews
1 tbsp raisins (kishmish)
1 green chilli
1/2 tsp pav bhaji masala powder
less than 1/4 tsp chilli powder
pinch of turmeric powder
salt
2 tbsp ghee + 2 tbsp oil
2 tsp grated carrots or beetroot
1 tsp chopped coriander leaves.
1 tsp mustard seeds
pinch of hing powder
1 tsp urid dal
few curry leaves.

Method:


Dry roast the rava and keep aside. Grind the green chilli, coriander to a smooth paste by adding water.  In a kadai, heat the ghee, fry the cashews till golden brown, remove.  In the same kadai, add the raisins, when it is done, remove, keep aside.  add the oil.  fry the curry leaves, add mustard seeds and urid dal, hing powder, when it is done, add the  coriander  paste, 3 cups of water.  add turmeric powder, salt and bring to boil.  when it starts boiling, add the rava slowly. ensure that no lumps are formed. mix well,  add the pavbhaji masala, cover and cook.  Garnish with fried cashew, kishmish, grated carrot or beetroot and chopped coriander leaves.  Serve hot with chutney, sambar, onion raita and pickle.
