How to make this pickle. I had a very limited quantity of this, so I prepared a Chutney and Pickle using 50 gms for each recipe.
Ingredients:
50 gms Chundakkai
1 Tbsp Chilli Powder I used Kashmiri Chilli powder
Pinch of Asafoetida, Turmeric Powder
1/2 Tsp Rai dana/Rai Kuria
Generous pinch of Methi Powder
Salt as required
2Tbsp Tamarind Pulp + 1/4 cup water
2 Tsp Sesame Oil (you can use whatever oil you are using at home)
Few curry leaves
Method:
Firstly, Crush the Sundakkai with Motar and Pestle or Cut into halves with Knife. Put in water to remove the stain in it.
Heat Oil. Add little mustard seeds. When it crackles, add the Curry leaves. Then add Sundakkai and saute for 5 minutes. Add salt. Add Tamarind Pulp plus water and cook till the raw taste of tamarind goes off and the sundakkai is soft. Switch off gas. When it cools down bit, add the Masalas and mix well.
The Sundakkai Pickle is ready. If you are making in large quantities increase the quantity of oil.
In place of tamarind, you can use lime juice at the end of the process.
